Sweetening up sour fresh black raspberries.....

Anyone know how to do this successfully? According to suggestions from the Net, I soaked them in lots of sugar and water overnite and they still were sour...
I luv the taste of em and the red raspberries which are always sweet from the grocers....
not enough watering before they're picked is usually the reason but I have no control over that.....and I'm hesitating trashing them so I might just
dip em in sugar which will mask the unpleasant taste....
 

Pops. My remedy is no magical fix, but I would enjoy them as is with heavy cream or a milk in-line and consistency with evaporated milk, and add granulated white sugar to taste/sweeten.

It's anything but natural, but at least you'll get to enjoy them as more of a dessert rather than fresh picked goodness, but IMO it beats tossing them.

P.S. The heavier cream/milk with sugar will offset the sour. I think you'll be happy with the taste.

Though there's almost nothing better than perfectly ripe fruit, adding a pinch of salt can actually boost the fruit's natural sweetness and also reduce the bitterness of unripened fruit.

(I sprinkle salt on lemons and eat them fresh if I have a cold ) :)
 

A little baking soda will help to counteract the natural acid in blackberries and allow you to get away with using less sugar.

Adding baking soda to save sugar in fruit pies was a standard trick in wartime kitchens during rationing.

It doesn't take much try 1/8 to a 1/4 teaspoon for every cup of fruit.

Thanks for all your suggestions which I will definitely try on the ones left.....I don't keep powdered sugar around cuz I don't bake pastries....gonna try the pinch of salt for sure....
I swear the baking soda has so many uses for everything, as I've been learning and using over the years....its been my deodorant for the last five years instead of the chemical-filled ones in the stores ☺
 
So I tried soaking my sour blackberries, blueberries (which I actually cut in half), and strawberries in lots of sugar with fruit juice and this
did not work at all....soaked for hours then for days...even looked up remedies to sweeten em up and none of it worked....
so disappointed...also read that once picked too soon, these berries do not sweeten up after picked which I already knew....
gonna try adding the baking soda....bet it will work!
 
I've never added any type liquid when sweetening fruit. Just sugar. Sugar attracts water (hygroscopic) so used alone, it pulls the juices by osmosis from the fruit. If you're adding liquid, that's weakening the strength of sugar's effect. Not sure how much that matters if the berries are sour because they're not ripe enough, but it's worth a try to use sugar alone.
