Thanksgiving Turkey ala Jacques Pepin

The only thing I didn't like was cooking the stuffing separately from the turkey. I both stuff the turkey and cook some of it separately because I have so many people to cook for, all of whom like lots of leftovers. But stuffing tastes different when not cooked in the turkey. So I prefer it the original way. I take precaution so it is perfectly safe.

I read Jacque Pepin's autobiography and it was really interesting: The Apprentice: My Life in the Kitchen.
