What are you going to start off with ?

I'm taking some mixed greens ....
moving on down , I see some cucumbers - load it up !
Ooohhhh ,the next station has mushrooms and tomatoes ..... load up some more !
Here come the toppings ....
let's see .. how about hard boiled eggs,diced ham,cheese and top it off with Ranch Dressing :)

This is a meal ! Lol. Who's next in line ?
 

I think you have it in pretty good order Toomuchstuff, but before I go to the toppings I have to have chick peas, plenty of chick peas or Garbanzo beans as some folks call them and a little red onion. For the toppings I need some dried cranberries, toasted sunflower seeds and bacon instead of the ham then Russian or Olive oil and balsamic vinegar for dressing. Perfect!
 
I'll have some organic baby spinach, chives, sweet onions, mushrooms, fresh broccoli, red peppers, croutons and creamy Italian dressing.
 
Hopefully the salad bar will have corn relish and black olives?

I make a half batch, with artificial sweetener, when it gets too hot to cook it makes an easy scoopable side dish.

Corn Salad/Relish adapted from a recipe by Marion Cunningham.

4 cups fresh or frozen corn
1 red pepper
1 green pepper
6 ribs celery
2 onions

Pickle
1 cup sugar
2 t dry mustard
2 t turmeric
2 t celery seed
2 1/2 cups white vinegar
1/4 cup water

Chop the vegetables roughly the size of corn kernels. Put everything into a pot and bring to a boil, simmer for 15 minutes. Put hot relish into sterilized jars and refrigerate when cool. This will keep in the refrigerator for several weeks. You can also can it for long term storage by processing in a water bath canner for 10 or 15 minutes. I just put it into a covered dish and refrigerate it overnight, or several days, then serve ice cold.
 
Spring greens, roasted red peppers, kalamata olives, sunflower seeds, avocado, cucumbers, feta dressing (or feta cheese with ranch or italian). Oh wait, they don't have avocado at salad bars. You can tell how often I do salad bars...like never :D
