Using Almond Milk for Preparing Instant Pudding

Never understood how they could call ground up almonds and water, milk. Guess it depends on what milk means to you. I drink 1% milk with my breakfast. Would never consider anything to do with all the "new milk" drinks around now. Dairy milk here.
 
I prefer dairy milk but I use unsweetened almond milk for a variety of reasons.

I haven't made pudding in years but every now and then I'll pick up a Snack Pack for a dollar, I can't make it for that.

I wish that I could find this one in the local stores.

This made for interesting reading this morning. Almond orchards are already environmentally suspect as they use HUGE - and I do mean, huge - amounts of water compared to other crops. California, which grows virtually all the almonds in the U.S., has begun to see farmland sink from 1-4' because of excessive irrigation pulled from the state's aquifer:

I have used soy milk to make the cheese sauce for macaroni and cheese and also for Moussaka, and it DID thicken. I have not yet used almond milk.

I think they use the term "milk" to mean something that is liquid and creamy. They also say ''coconut milk''. They also call nuts ''meat'' even though they're not animal flesh.
