Idaho has a potato shortage. If you haven't heard about it already or noticed fewer and fewer potatoes in your grocery store's produce section, you will soon.

I'm surprised to hear that...about the hostas being edible.
Would have never guessed.

Prices were higher than normal for a year. They used to have 5-10lb bag sales all the time. I mean 1-2 dollars now one is lucky to get them under $4 a bag. I've started eating more rice and have cut down the fancy fries. Even tatar tots went up.

What's a meat and potatoes guy supposed to do?

Try Chilli Con Carne on rice, or a beef stew. Pasta is another great substitute, Spaghetti Bolognese, always a favourite.
Don't forget Chow Mein, no potatoes there and Risotto is an Italian variation on rice. Lots of choices about.

When I was a kid we ate potatoes at every meal.

A bowl of leftover boiled potatoes in the fridge was about our only convenience food.

Now I buy a few loose potatoes two or three times a year.

If nobody told me that there was a potato shortage I probably wouldn’t notice.
