Our favorite way is to take a small cookie tray, dip or coat the fish in olive oil, sprinkle Italian
dressing seasoning on it (like from a packet of Italian Seasonings), top with Panko breadcrumbs,
sprinkle cheese on top if desired and bake at 400° for 15 minutes for most white flaky fish like cod.

I fish a lot and used to take my catch home to fillet and cook but it got to be too much work, so now I just buy frozen which is already coated and seasoned. When I cooked them, perch were the best followed by the other pan fishes. Bass were so-so depending on where they were caught. Pickerel are sweet fleshed but bony.
