Whiskey Fungus - A threat to one of our vital industries.

A Jack Daniels building project is to be halted after a neighbour argued she was facing a plague of whiskey fungus caused by escaping alcohol vapours.

Christi Long, of Lincoln County, Tennessee, claimed her property was coated in the fungus, which appears as a black crust on surfaces.

It is a growing issue for people in the area, her lawyer told BBC News.

The fungus, which consumes ethanol fumes, grows on surfaces near bakeries and distilleries around the world.

On a side note, the Jack Daniel's Distillery is in a 'Dry' County.
A recent change allows you to purchase commemorative bottles at the distillery and do sampling there.
My first trip there was when we moved to Tennessee and since my last job was as a Distiller, I was interested
in their process.

Shocked to see it in a Dry county and not being able to 'sample' the finished product was a let down.

Still, it was a fun time for me, while my wife just rolled her eyes at my excitement of the whole thing.

My wife and I have been to The Jack Daniels distillery. Standing by a vat of whiskey, my wife asked if the taxation was akin to the way Brits tax Scotch Whisky. The guide lifted the lid and wafted it up and down, the fumes nearly bowled her over. "There you go Ma'am," said the guide, "all tax free."
Note: I didn't miss out the letter "E" in Scotch Whisky. The word whisky spelled without an "E," is copyright to Scotch, which is why Jack Daniels, and others, circumvented the trade laws by inserting the letter "E" in whiskey.
 
At first, it sounds like another frivolous lawsuit. But a large portion, up to 20% of whiskey is lost to the "Angels Share"- evaporation of alcohol from wooden barrels. And the Daniels Distillery has many thousands of wooden barrels in storage. I think they just built another huge storage warehouse. Plus they routinely reposition the barrels to aid in aging, which increases the angel's share.
 
Seems like a simple enough problem to solve. Don't build anything else so close to a distillery.

This problem is not so easily solved since you can't make whiskey without water:

I live close to an area famous for whisky distilling. The area where I live even had a small distillery in times long ago, and there is still a house called "Distillery cottage". There are numerous "Bonded warehouses" round here where whisky is left to mature in casks - often old sherry or bourbon casks. The walls of the older warehouses are black from the mould.
