Why is my garlic yellow?

As many of us love garlic and grow our own, maybe this will be of interest.

This is called Waxy Breakdown, a physiological disorder that affects garlic during latter stages of growth and is often associated with periods of high temperature near harvest.

Is it safe to eat? No, unfortunately they are not good to eat. They are not toxic, but cloves affected by this will be slightly rubbery and don’t taste like what a healthy garlic should.
