Hot or cold vegetable frittata

Leftover frittata can be used to make a hearty sandwich with the addition of some olives, red onion, tomato slices, etc...
 

Ahhhh, asparagus tips, wonderful! And made into a sandwich, I never thought of that. Rose, why cut the recipe in half? I cut it into 8 portions and freeze them in small square containers.

I was just making some masa tamales and had everything ready and then realized I forgot to buy the canned chiles. I wasn't about to drive 12 miles for a can of chiles, so I added some teaspoons of chile powder to the masa and added green olives to each tamale. They are cooking now and I hope I don't hate them and have to throw out. I'm not religious, but I feel that throwing out food is a SIN. Wish me luck! Tomorrow I will cook polenta and some biscotti. I do some marathon cooking for 2-3 days and then don't cook for 3 weeks.

I could freeze, I usually do that. Just for the first time I would want to make a small one.

You're making tamales? That's a lot of work, how well do they freeze?

I know, when I cook a lot in one day, enough of each to freeze, by the time I clean up the mess, I'm done for at least 2 weeks!

If you like cream cheese, you WILL like this frittata, but making a small one is wise the first time. I don't make the traditional tamales, where you have to scrape the green corn, I just use the Masa that you can buy like flour. I freeze everything and am not fussy, and the tamales, for me, taste just as good when frozen and reheated. BTW, I just had the tamales, and although I prefer the ones with green chiles, they weren't bad at all, I ate two and froze the other 10.
