Fried zucchini slices.

It's that time of year. Zucchini. Many gardeners are giving them away because they are so prolific.

This is a recipe my mother used.

Egg and a bit of water mixed for dipping.

Breadcrumbs plate.

In fry pan or deep fryer.

Dip the zuccini in the eggs then dip into the breadcrumbs and coat. Use spices in the breadcrumbs of your choice.

Fry until crisp. Dry on paper towels. I sprinkle with vinegar but I guess someone can come up with some kind of dip.

That slice also breaded is that Indian Naan bread.

I make my own bread crumbs from stale bread but I have been told that Panko is the best.

Never tried it. I put all the spices I like in the bread crumbs and all I do is grate stale bread after heating it up in the oven and leaving it there to harden.
 
I coat mine with buttermilk, then coat with salted white cornmeal ...not the white cornmeal/flour mix you'll find in most Southern grocery stores, but plain meal made of white corn. So delish. It fries up super crispy and has a popcornish taste.

I absolutely love fried zucchini and fried egg plant. For some reason egg plant makes my acid reflux problem worse but when I substitute zucchini I have no problems. I can't wait for some fried green tomatoes also.

Regular flour is good as a coating as well. I do them both ways depending on what I'm in the mood for. I also make a zucchini parmesan the same way as if it were eggplant.

I'm hungry now!
