Potato Salad Recipe, What's Yours?

Potato salad recipes are all different, but taste good. I enjoy trying different ingredients to get a slightly different flavor.
What is your favorite way to make potato salad?

Here is mine. Super simple.

Dice red potatoes, put in pot to boil. (2 med potatoes per serving, you will have left overs)
While the potatoes are cooking:

Open a jar of capers and a jar of pimentos - drain.
Dice red onion into small pieces.
Boil 1 egg for every 3 potatoes. (I really like eggs)
Open can of black olives, drain, and break into small pieces.

Put all ingredients in a large bowl.
Add mayo
Sprinkle some garlic powder (small amount), celery salt (or powder), add a lot of dill.
Mix together adding mayo if needed.
Cover, put in frig to make friends and get cold.

You usually don't need to add salt because the black olives and capers have plenty of salt.
 

I normally use the same ole', same ole that everyone uses but a minor emergency called for the dish super quick and mayo was down to a slight teaspoonful. Boiled some diced red potatoes, skin on; Then drained well and while still hot and in pan added the tiny bit of mayo and blub of creamy ranch dressing,
Stirred and chilled in frig. Then regular ingredients. It was for teenagers and they will eat anything but it was a hit, even with adults.

Adding mayo and dressing while potatoes are hot makes big difference. I've since learned that any creamy dressing will do
 
I still make the plain old potato salad that I grew up with.

I boil the potatoes with the skin on until just fork tender, peel them while they are still too hot to handle, cut them into chunks and sprinkle them with apple cider vinegar, S&P( a good bit of salt), add chopped hard-boiled eggs, minced celery, a good shake of onion powder and mix it all with enough Hellmann's real mayonnaise to make the salad a little bit loose (the warm potatoes will absorb some of the dressing and the salad will tighten up in the refrigerator), refrigerate several hours or overnight. Sometimes I add a little chopped green or red bell pepper, a squirt of mustard, or a dollop of sour cream if I have it on hand. I use onion powder instead of the real minced onion because I believe that it tastes better the second or third day. Maybe it's just me but sometimes real onion overpowers things and adds an odd body odor smell.

2. Drive to store.
3. Buy potato salad from deli.
4. Drive home.
Years ago I lived near this Bakery/Deli/Dairy store and people would bring in their salad bowl to have it filled with potato salad for family gatherings, graduation parties, etc... The staff just weighed the bowl, filled and decorated it then weighed it again to determine the amount of potato salad it contained.

Add:
Diced radishes, green or purple onions, pickles, celery, red pepper, Hellman’s real mayonnaise
bacon and eggs . Then I add some fresh rosemary and cilantro, salt & pepper to taste.

The only problem with making this is now my husband won’t eat any other kind. I’ve spoiled him. 😩Lol.

The regular potato salad prep (prefer red potatoes, no skin) but must use Hellman's mayo and add chopped eggs, paprika and a little bit of chopped onions. I can't remember the last time I actually made potato salad. I like Jujube's solution but last time I got "homestyle" potato salad from Acme supermarket, it wasn't nearly as good as it used to be. I had to add my own hard boiled, chopped egg to it.
