Instant Pot

Even though I live alone, I love to cook. It's not always easy cooking for just one but in the decade since my divorce, I've become adept at scaling down favorite recipes, trying new recipes and making some old favorites that my Mom used to cook for us when we were kids. I make almost everything from scratch - it's easier and healthier and I get to control the salt, fat, sugar and the quality of ingredients.

I don't like a lot of single-purpose kitchen gadgets. For example, I don't need a rice cooker or a bread maker. But I did finally decide to get an Instant Pot (the small 3 quart size). It arrived today so I'll be trying it out one day next week. Does anyone else have an Instant Pot? If so, what do you think about it? What kinds of things do you make in it?
 

Yes, I have two of them... a 6 qt and the 3 qt. My favorites are pasta dishes (one rigatoni and italian sausage with artichokes is a favorite) and soups like split pea with ham. I started out with the 6 qt but quickly learned that the smaller one works great for just the two of us.
 
My BIL has one and he makes fantastic red beans and rice in one. Of course they are from La. and make all those fab Cajun dishes. He has started adapting his recipes that are in his head to his instant pot. I would like to get a small one for myself. I would rather eat his cooking than my sisters. She does make an awesome Mexican cornbread that complements his beans and rice and gumbo dishes!
 
I have an old Presto pressure cooker from 1972. I've replace the gasket a couple of times and the controls once. It works great but it is so heavy. You have to lift the whole thing into the sink to release the pressure. I am so close to getting one of these pots and they are getting cheaper. Let me know what you think of it Leann and good luck with your new pot.
 
I thought about getting one a few months back, but decided not too. I don't cook for hubby and me like I use to and I couldn't justify the price, either. I use my crockpot....sorry...slow cooker...and that's good enough for me. I've got lots of time since I'm retired and I'm home most of the time so I don't need to rush with anything anymore :) Hope you enjoy it. Let us know.
 
We bought one. Really great for making soups quickly, like for lunch, and we made carnitas, and that worked well. Tried adapting another recipe for chicken and rice, and I wasn't so crazy about th. So For some things its great, for others, meh.
