mini sweet peppers

so, i bought a bag of those cute little sweet peppers... red/yellow/orange. thinking of stuffing, wrapping with a slice of bacon and baking to an almost bite-sized (well maybe 2 bites) treat. any suggestions for what to stuff with? each cute little pepper might take a TBSP or so of whatever filling. i was even thinking a take on chili rellenos?? I'm not into HOT... a self-proclaimed "wienie hot mouth"!
 

Oh my... sounds delish.

A mildly spiced (for taste - not hot) ground beef filing would be the top of my list, and once peppers were done, a light sprinkling of Asiago or Parmigiano-Reggiano.

A fresh homemade garlic marinara sauce would compliment the overall dish so well!

Don't know Asiago but have Parmigiano - Reggiano - only need a little as you note 🤗

Asiago is very similar in taste to a quality Parmigiano-Reggiano, very tasty and very well suited to any Italian dish.

Do give it a try, Tre, if and when you ever get a chance.

Asiago also makes for an excellent snacking cheese or on sandwiches.

I don’t like Asiago as much. I think it has a somewhat sour taste as if is a little off.
 
I'd try to make a smaller version of the chili relleno...which I love. But Im not sure how???????
Of course the jack or some sort of mexican cheese..but how to coat it lightly like a relleno?

For melting..^^^^^^^^^^^^^^^^^^^^^^^^
