Tofu Alfredo Veggie Casserole

I pkg. extra firm tofu cut into 16 pieces
cut up celery (2 stalks)
cut up mini peppers (4)
cut up yellow onions (2 medium size)
cut up mushrooms (5 medium)
cut up broccoli (about 8 pieces)
1/2 jar Alfredo Sauce
1/2 cup water
1 t parsley
1 t unsalted mixed spices (any kind you wish)

Put all of the veggies together in a large casserole. Top with the cut up tofu. Top tofu with Alfredo Sauce. Pour the water along the sides. Then sprinkle parsley on top and then sprinkle the mixed spices on top.

Put in preheated to 350 degree oven for 1 hour.
 

I'm always looking for recipes for meat-free dishes because my sister and her husband are vegetarians, and this sounds really good! I assume I could substitute other veggies if I don't have everything on hand...I'm going to try it the next time they come over, and I'll report back. Reporting back: Just had a bowl full of this recipe over some crumbled saltines and I really liked it! I know I'll make it again. The veggies were cooked just right. The tofu is textured and was good with the spices and sauce over it.
 
This recipe is full of healing vegetables like onions broccoli mushrooms and peppers and celery and tofu is very good for you too.
