Cottage cheese, what can you do with it?

Trying to eat cottage which will be easier for my stomach to digest. What are the different ways you eat cottage cheese, besides plain? Simple recipes as we don’t cook much, but our turkey came out lovely. (No one died or got sick.). Sent a picture to my daughter and it was very “juicy”. I ate a small piece.

But now I am going to try cottage cheese.
 

I mix cottage cheese and jello. Make one package of jello, sugarless or regular, but use only 1 cup of water. When cool add 1 cup of cottage cheese. Refrigerate and stir once in awhile so the cottage chees doesn't go to the bottom and then leave until firm.
I use raspberry flavor because its a bit stronger. It also unmolds nicely and looks pretty.

I’ve been eating a lot of jello lately, sugarless, I will try this.

I used to make the same dessert years ago with a twist.

I'd take a large container of cottage cheese, add a package of orange Jell-O to it, then mix in fresh whipped cream, chill and serve.

So yummy!
 
I like the cottage cheese that comes with pineapple in it. They sell it in my area--there are also other ones with different things added to it. I personally have always liked to put some cut up tomatoes in it.
Pineapple in cottage cheese is good ... also peach slices ... I like both with juice from the fruit added.

Never would have thought of tomato in it though.
 
I like cottage cheese with a no sugar added pineapple or peach snack cup.

I enjoy the convenience and portion control of the snack cups because I usually lose interest before I could finish a full-size container.

You could also try one of the flavored cottage cheese snack-size cups that already contain fruit or garden vegetables.

I bought pineapple ice cream topping to put on it, could not think of a thing else 😂
 
I like to add fruit to it. This is on the order of the Waldorf Salad. but uses strawberries and pineapple. You can use whatever you like.

Strawberry Pineapple Salad
6 fresh strawberries, cut
2 stalks of celery, diced
4 TBS crushed pineapple (you could use tidbits also but they won't mix in as well)
1 cup cottage cheese
1 TBS chopped walnuts

Dice your celery
Cut up your strawberries
Place into a bowl, add cottage cheese and pineapple.
Mix everything together gently. and Sprinkle the walnuts on top.
 
This is how I got my kids to eat cottage cheese: Mix a large tub of cottage cheese with 1 regular sized box of cherry flavored Jello and stir in a can of fruit cocktail, drained. You don't have to set the Jello, you just mix it into the cottage cheese and then add the fruit and it's ready to eat.

Me too w/ the tomatoes...and a little pepper. I eat that in the summertime when the tomatoes are nice n ripe.

I"ve also had it w/the pineapple already in it...it's good. Or, just plain is good too.
 
I remember an actress ,Morgan Fairchild, saying she had cottage cheese with spaghetti sauce It was Lo cal and similar to lasagna. Ok. Nothing is similar lasagna as far as I am concerned. Personally I buy the Dole peaches individual containers and mix it with a couple of spoonfuls of cottage cheese.
 
I eat it with ratatouille served at room temperature. (Eggplant, peppers, zucchini, tomatoes, onions, other veggies sauteed together). Or with cut-up cantaloupe and blueberries.

Cottage cheese is ok but I don't really seek it out.

My daughter sometimes uses cottage cheese in place of ricotta when she makes lasagna. It's yums!

Do you just put in the powered jello, no liquid?

I don’t care for it plain, but I can eat it with the pineapple and I going to try it on the jello.
 
As far as I am concerned it is a very versatile topping. Instead of jam and cream on a scone, I sometimes use cottage cheese as a substitute for the whipped cream. I spread it on cruskettes and top with sliced strawberries or I first place sliced tomato on the cruskette and add dobs of CC on top. Finely chopped tomato, cucumber and onion added to the CC in the tub makes a nice savoury combination that goes well with a salad or as a topping for toast.

I like the sound of the Yorkshire cheesecake.
 
You can add whatever else you like:
peaches
pineapple
berries
sliced apple with cinnamon
maple syrup
honey
toasted nuts
cucumber
grape tomato (or any small tomato)
baby carrots
sweet pepper strips.

You can add to pasta dishes in place of some of the cheese.
 
I like to use it to make a Cheese Danish.

Toast a slice of bread.
Mix 2 ounces cottage cheese, 1/8 teaspoon of cinnamon and vanilla extract, 1/3 teaspoon sugar or sugar substitute.
Spread it on the toast and place it under the broiler until warm and bubbly. Serve warm.
(You can also add 1 or 2 tablespoons of crushed pineapple to the cottage cheese mixture before broiling it.)

I also like cottage cheese mixed with chopped peaches served on a lettuce wedge.
