Cornbread Recipe Needed

Deb & Pam both made cornbread recently. So did I and mine, muffins actually, were a failure.

Any good recipes from scratch?
 

My mom's old recipe is pretty simple:
Beat 2 eggs, 2 cups (butter)milk, and 1 tsp soda
Mix in 2 cups cornmeal and 1 tsp salt.
Batter will be slightly lumpy
Pour batter into a hot, greased square pan (8") and bake at 450 degrees for about 20-25 minutes, or into greased muffin tins for 10 to 15 minutes.

Yours look good too Murrmurr. Is that baking soda or baking powder?

The one thing I never buy is buttermilk. Maybe I should search for some of the powdered stuff. For some recipes I sub sour milk by adding vinegar.

I've been using the same cornbread (recipe) for ages and did not know it was Amish! (Not that there is anything wrong with that!) lol I make the first recipe you posted minus the cream of tartar.

Just the recipes I posted are Amish, Pam, not cornbread recipes in general.
 
In my haste to get out of the grocery store I grabbed P.A.N. cornmeal. It was much too fine. Has anyone ever used this brand? I bought some regular old-fashioned cornmeal today. Almost $3 for a small bag. 😮
