Sweet, fluffy, Watergate Salad is a classic recipe made with pistachio pudding, pineapple, marshmallows, chopped nuts, and Cool Whip ( @Aunt Marg ) ~ yes, I know you don't eat Cool Whip but can make your own variation.

I have not been in the mood for this for about 2 years. Time for some Watergate Salad!

What Is Watergate Salad and Why Is It Called That?​


There are a number of theories about the enduring green fluff.

There aren’t many popular foods for group events named after government scandals. After all, politics already upset enough appetites at the holiday dinner table. One politics-themed concoction, however, continues to shine at potluck events: the Watergate Salad, also known as Green Fluff, Green Goop, or Pistachio-Pineapple Delight.
Watergate Salad is a rather strange dish; it’s a relic of the mid-1970s, when instant gelatin was still a new invention. The culinary world whipped up “salads” containing exactly zero lettuce, Kraft began selling a pistachio-flavored Jell-O for the first time, and the nation was experiencing its very first presidential resignation. From this came an easily-thrown together side dish, one made by mixing a packet of pistachio Jell-O, one cup of drained crushed pineapple, one cup of miniature marshmallows, and, optionally, one half-cup of walnuts. After that, a cup of whipped topping is stirred in, and the resulting dish chilled. The end product is a sweet, fluffy, marshmallow-filled dessert that melts in your mouth and resembles some kind of strange, blended parfait.

Never cared for it myself. Tried it once and would rather have pineapple upside cake with real whipped cream. Have not made it in awhile but maybe its time to dig out the recipe and enjoy again.

Here's a variation on the Cool Whip salad that I grew up with. It never had a name, though.

Heat a large can of shredded pineapple, juice included, to boiling.

Pour in a small box of your favorite Jello (I like black cherry). Mix well and let totally cool.

When cool, mix in a bowl with a carton of cottage cheese and a carton of Cool Whip.

Refrigerate for a couple of hours.

How life gets away from us.

I have been hitting gardening with vigor, even during this tremendous heat spell were under, and life just seemed to get busier over the past couple of weeks.

The pineapple is fine, I bought canned, but the whipping cream went to work with my husband one morning last week to share with everyone with their coffee, but now that you reminded me, I'm on it again and this time I will not disappoint.
