Yummy meatball Hors D'oeuvers
1 lb lean ground beef
3/4 cup of dry small bread crumbs
1 small onion, chopped extra finely
1 fresh garlic clove, minced
1 whole egg
1/2 tsp salt.
1/2 tsp black pepper
1/2 tsp ground thyme
Combine all of the above and form into meatballs BUT NOT larger than 1 inch.
bake in oven until uniformly browned.

3 TBLSP butter
3 TBLSP flour
1 +1/2 cup rich beef stock
3/4 cup red wine
3 slices of bacon, cooked and chopped finely
2 lg mushrooms, chopped
3/4 tsp black pepper
1 hefty pinch of cayenne

melt butter in pan on low heat
Add flour, stir and make a BLONDE roux.
Add all other ingredients and simmer until sauce is reduced by half.
Add baked meatballs, cover, and GENTLY simmer for 15 minutes.
skewer with frilled toothpicks, place on serving tray and pass around at your party. offer small napkins to you guests.
