Kitchen Layout

WE have what we call a 2 a$$ kitchen. Big enough for the two of us to work, but nowhere a huge as that first one. There is a thing called the "Magic triangle" which is the number of steps between the stove, the fridge, and the sink, You only want a couple of steps on each leg of the triangle.
 

I love the layout of this kitchen. Notice the 3 ovens, the built-in refrigerator, plenty of cabinets and lots of counter space.
The only thing I'd add is a hanging rack for pots and pans.

If I was younger, had a large family, and entertained often, I would think that would be a wonderful kitchen.

But the here & now in me likes compact kitchens these days ... In my apartment, I can cook, wash dishes, and grab things from the refrigerator in one spin ...lol .. Life is simple & good. .... and so easy to clean up!

I have numerous small kitchen appliances , like a Kitchen-aid stand mixer, food processor, toaster oven etc, for which I need lots of counter space. Additionally, when I make a pizza, I need room to move about, tossing the dough.
I may be the odd duck, but I often have several things going at one time. this is especially true when I make Chinese. There is the main course, the fried rice, the spring rolls AND the dipping sauce for them. Truly, it takes up one heck of a lot of space.
I admit, I do dislike the clean-up afterwards
 
But you'll do the clean-up afterwards, right? Otherwise, you can't come and live with me so you can cook and bake to your heart's content. I'll be the Taste Tester in Chief, and I'll clean up after myself too. :)
Once I had a GF who actually liked doing the clean-up. She said, "I'd much rather cleanup than cook".
 
When I had my maid service, 40 years ago, I had a client who lived in a mansion. All of his small kitchen appliances were under the countertop. One pressed a button, and whichever appliance one had selected rose to the countertop and clicked into place. It was really neat. I was astonished when he showed it to me. From what I could tell, no one cooked though. Or had anything catered.
 
I have never mastered the art of cleaning up as I go along. For one thing, I'm cooking too many things at once for that to make much of an impact.
I have always tried to CAYG. (clean as you go) but I admit I got used to the idea of having employees do that for me.

I realize you were a working chef, so you had employees. But this reminds me of when a volunteer for some new baby organization came to see me after my triplets came home from the hospital. She walked into my house, looked around, and asked me, "Where are your staff?". I was so surprised, until I realized she was a rich volunteer who had no clue that sometimes triplets are born to people who don't employee anyone. So her job was to arrange my life to go smoothly (ie, perfectly). Not gonna happen with just me. (The town I lived in had tons of rich people.)

I like all the counterspace, Capt. I don't have enough of it here. But I'd need more upper cabinets. For one, I'm not good at bending and digging around for stuff that close to the ground, and for another, my home is licensed for foster care of kids up to age 2. I'm required to have to have child-proof fasteners on the lower cabinets, so I use about half of them to store toys...no fasteners needed on those.

Do you have empty wall space ? If so, maybe you could shop around and locate a few more UPPER cabinets. Easy to install with a bare minimum of tools.

This is truly lovely, but you'd have to have a staff to clean it, not to mention running shoes to get to everything. It's a nice dream, since probably none of us can afford it. But it might not be practical for one or two people.

Kinda like someone who loves cars, and dreaming about a Ferrari. I dream about cooking for a crowd.
