The meal of Liver and Onions and why you like or don't like?

This meal is one I have always preferred as a bimonthly meal, gosh I much enjoy
it too, tender cooked liver and sauteed onions, with mashed potatoes and gravy,
and Brussel sprout veges. Having it tonight, with cheesecake for dessert ;)
 

For years I hated liver, probably due to the way it was cooked and served in my school's canteen. It was so tough that you could repair the soles of your shoes with it. Later in life and now married, I got into cooking, and very enjoyable it was too, helpful as well, my wife, working shifts in the ambulance service, knew she would be coming home to freshly cooked meal.

The liver and bacon recipe that I came across in one of my cook books looked interesting, I tried it, served it up and we both enjoyed it. The recipe called for lamb's liver and it had to be cut in to small pieces. The cooking process and the mix with the bacon, also cut into small pieces, and vegetables like onion, garlic, tomatoes and spring onions, gave the meal it's delicious flavour. I followed the recipe instructions and served it with pasta. We probably eat liver once every two weeks.

My mother used to fix it with onions, mushrooms , bacon or any combination about once a month or so when I was growing up, and I liked it. I used to also when there was very high quality meat and fish market near where I lived in Pgh . But it doesn’t seem to be at all popular around here, and I just don’t trust the quality at the supermarkets and it isn’t something I’d order in a restaurant.

Never liked beef liver as a kid cause it was the only thing my mother could not cook properly, always came out tough. (Her breaded chicken livers were quite good tho.) In my 20's a friend/housemate taught me how to properly cook it. I've never been as big a meat eater as most Americans, tho i have no desire to go vegan either. When i want meat i eat it, most often in stews or casseroles.


Oh, and just to be clear not convince anyone they should eat it:
The liver actually isn't a filter, that traps and stores toxins, it is more like a treatment plant that processes toxins so they can safely move thru your system and be safely excreted from the body.

It's not too bad if not overdone.

I avoid it mainly because the liver is the organ the body uses to filter any poisons from entering he bloodstream. I don't want to eat a concentration of poisons and waste.
