I make great chicken soup but I can't make vegetable soup!

I can make good chicken soup but for for the life of me I can't make vegetable soup. I have tried many recipes. I can't get the "Soup" part right to taste .
It is either too thick or isn't flavored enough. LOL

Not sure if this suggestion helps. I make my soups in the crock pot. Big Batches..to freeze. So lots of broth. I will add a can of cream of something soup. Usually mushroom. But, I normally just make chicken, so this may not suit your recipe

All of my vegetable soup recipes have beef/ bones/ stock or chicken/ stock in them otherwise they are really blah! I really like Alton Brown of the 'Good Eats' TV Show, Garden Vegetable Soup. Look it up online...it is really good!
 
Have you tried a beef vegetable soup? I have to have some meat,( chicken or beef ) in my soups.
Or, a Minestrone soup? That has a lot of veggies and it's delicious! (so easy!)
It sure is time to bring out the soups now, isn't it!
I love them because I can make a big pot and eat it for 3 or 4 days!
And I make an economical "taco soup" that I LOVE!

I use the same. Start with a good beef bone. I buy beef stew meat and season it really well before adding to water in pot. I use fresh potatoes and baby carrots after cooking the beef bones and stew meat for about 30 minutes. I add the cut up potatoes and carrots. After that simmers a bit I add a frozen bag of mixed veggies. I also add a couple of beef boullion cubes. I keep adding things and cooking and tasting. Serve with fresh cornbread or even better Mexican cornbread.

Yes, to the taco soup. It's so easy.

My neighbor used to make the best vegetable beef barley soup. I have her recipe, so I should give it a try.
 
To save time and money on soups, I often start with the Hormel "Square Table " (found in the meat section)
of roast beef au Jus or chicken breasts with gravy. Then add the broths, seasonings, veggies, etc.
potatoes or noodles (or barley) It's less than half the price of buying a roast.
 
I like a tomato based vegetable soup. I use the large can of tomato juice for the base plus about a cup of water. I use browned ground beef cooked with onions and fresh garlic. Use paper towels to drain and remove grease. Add the juice, water, ground beef, a couple of cups of chopped cabbbage, half a cup of green bell pepper or less. Cook until cabbage is tender. Then add a couple of diced potatoes, a bag of frozen mixed veggies, a half a teaspoon of dried red pepper flakes, a tsp of salt, tsp of italian seasoning, cook on low until potato is tender.

This is seasoned to my likes, you can adjust to your taste. If you don't like spicey don't add the red pepper or use less, no salt in your diet, don't add salt. I use a a lot of onion, 1/2 cup and at least 2 cloves of crushed garlic. The cabbage adds a lot of flavor IMO.
 
This is called ranch stew (some call it cowboy stew) It is more like s soup than a stew though.
It freezes very well so make a double batch if you can. The canned ranch beans through me off at first but it is so good.
I make Mexican or plain cornbread with it.

Ranch Stew

1 lb. hamburger meat (browned)

1 chopped onion

1 chopped bell pepper

1 can of Ranch Beans

1 can of white shoe peg corn

1 can of stewed tomatoes

1 can of Rotel tomatoes

Combine all ingredients and simmer for one hour.

Stir about every 15 mins just to make sure it is not sticking.
Enjoy!

This sounds really good. I am going to make it and put in the rotation. Love soups that freeze well!! I use the ranch beans in my chicken tortilla.
