How do you like.....?

That is a big fear, diabetes and having to give up the carbs. I love potatoes, pasta, bread of any kind. Let's not even talk about sweets. I know that is very hard thing to adjust too! I always think I could not do it but I think I could now if there was not other option. I would just have to research and find things I could have. Like pizza with cauliflower crust. Pies, without the crust. etc.

The good news is that with diabetes type 2 you can have carbs but must adjust your portion to the amount of carbs permitted per meal.
 
Don't eat bread or potatoes often, (maybe holidays)
but when I do, baked, double stuffed, with chives, gobs of butter,
gobs of sour cream, cheese, crisp bacon, black pepper, salt.
(completely hedonistic!) with hot sourdough bread and a juicy rib steak.

What I do if I want a potato is consider the carbs in an average potato (34 gms) & make sure the rest of the meal is low or zero carbs.
Sometimes for dinner, I'll have a potato with a green salad - which means the only carbs are in the potato.
Interesting that a sweet potato has a lower glycemic index than a white potato.
 
My preference is fresh summer potatoes with a little butter, S&P.

In the winter, I make mashed, done with a bit of milk. Sometimes I’ll add white pepper. It really can nip them up. Maybe a baked potato with S&P and green onions.

By February, there isn’t a decent potato to be bought. I’ll switch to boxed scalloped, throwing out the mix and doing my own blends. Other option is frozen French fries. Usually it’s rice.
 
I love potatoes. I'm a lazy cook so I will often bake a potato and pour some leftover soup on top. Split pea soup over a baked potato is my favourite. Chili and baked beans are good toppers too. I also like roasted potatoes, mashed potatoes, and gratin potatoes. Oh, and potato salad (with dill pickles) in the summertime. Did I mention that I love potatoes?
 
So how do you like your potatoes?
I like potatoes every which way, but I especially like scalloped potatoes! Baked russet potatoes with butter, salt and pepper, Greek yogurt, and sprinkled with fresh chives. For most other potato dishes, including potato salad, I like Yukon gold. 🥔 I also like sweet potatoes. 🍠

Love hash browns, home made. The ones at the restaurants are never cooked enough.
Dobie, I agree with you, hash browns ordered out are always under cooked. Under cooked taters are a crime in my book! 👮‍♂️On the rare occasions when I order hash browns in a restaurant, I always ask for them well done. ;)

I cooked them myself so I could control how well done they were.
