Alternatives to Lunch-meat Sandwiches

Make a big pot of soup and then freeze some up in containers for later. Serve with a bagel or crackers.

Grate old cheddar for a grilled cheese. Add Dijon and/or sliced onions in it while cooking.

Or another bagel with some of that grated cheese and use the broiler in your toaster oven.

Grated ham with mayo and pickles in a sandwich. Just realized I’m going to make this for lunch tomorrow.

Leftovers are the best lunch.

Cook an extra potato and fry up with scrambled eggs and beans.

Preformed frozen hamburger. They cook up quickly. You could bake some frozen French fries too.

Or cream cheese and olive
Oh God. I'm having a craving now. I'm going to make a special trip to the store today, just for that. As for lunch meats, one of my favorites was olive loaf, which is probably just like bologna and olives, but I can't find the stuff anymore. Bologna is probably my least favorite. I would never buy just plain bologna.

Bacon, lettuce and tomato sandwiches are a nice break from the usual.
I eat that a lot, especially in the summer when I can buy tomatoes at the local roadside produce stand. Instead of frying bacon, which is messy and takes too long, I sprinkle bacon bits out of the package on the toast. They stay in place as long as you put enough horse radish sauce on the toast, I also add a slice of onion. It's not the traditional BLT, but it's good enough that I eat one everyday in the summer. Well, OK maybe just 6 out of every 7 days.

For as long as I can remember it's been lunch-meat sandwiches for lunch ad nauseam. Had fish stick sandwiches today and will have chicken noodle soup tomorrow and maybe spam the next. Looking for ideas.

when I was counting calories to lose weight I often had a sandwich with cashew butter, spun honey and sliced bananas on Dave’s thin sliced seeded bread. It wasn’t free calorie wise but I could work it in and found it pretty filling when I needed it. Pretty tasty too.

I make macaroni salad or fried bologna sandwich. Last night we had baked potatoes with toppings .
Yes, macaroni salad, potato salad, etc., are an alternative to bread. You can have a protein (egg, chicken leg, etc) on the side or mixed into the salad. Nowadays there are things like couscous or quinoa salad.

When my daughter was in day care, I never packed sandwiches for her -- always something different. Her teachers said they looked forward to seeing what she had for lunch each day.

Did anyone say egg salad? I keep boiled eggs in the frig for different meals.
can you buy ready boiled eggs in your stores ? In Spain we can.. and I do buy them occasionally..laziness really because I could just boil eggs and keep them in the fridge.. but they're very handy to have shop bought, and I use them to have eggs on toast in the mornings.. along with some freshly picked tomatoes from the vine..

They're not available pre-cooked in the UK ...so I don't have boiled eggs as much here as I do over there.. I make scrambled or fried here..

I bought some packaged boiled eggs from Walmart U.S.A. one time. They were not too bad.

I was shocked to see these in the store. My sister and Bil served as deviled eggs at the holiday a couple of years ago. They tasted like rubber to me. I must admit they keep 2 or 3 chickens that were not producing eggs at the time. How they thought these would be good is beyond me. It is just get some eggs a week or two before the event. I always cook the day before the event, peel and store. The next day I use them in the way I need, deviled, cut up for potato, tuna, other salads or just in the fridge for breakfast or snacks.

Who buys boiled eggs? There is no reason for me, I just throw them in a pan with water, bring up to a boil, turn off the heat an let them set. Always cooked and easy to peel.
