I enjoy mashed, with plenty of real butter
Stuffed potatoes are a substantial meal, my favourite being Bacon and egg. Hard boiled egg, chopped, cooked bacon, spring onions, sour cream, swiss cheese
Baked, with baked parsnip and pumpkin
Potato cakes - Rosti style
Potato and Leek soup
Potato and egg salad
 

Geez, I'm going to be a contrarian again. I was raised on mashed potatoes and gravy (along with other things). Ugh. When I left home, I said I'd never eat mp&g again. And I don't think I ever did.

(When I was a cook, there was no way I was going to peel and mash potatoes either. I used a product called Potato Pearls. These were instant mashed potatoes, but close enough to the real thing.)

However, french fries, home fries, baked potatoes, scalloped potatoes ... those are all good!

I don't eat potatoes any more though.
 
My favorite taters are Yukon Gold and Russet.

My mom never made mashed potatoes because she did not like peeling them so I grew up wanting mashed potatoes. I still love them mashed, but also baked, scalloped, au gratin and fried with onions.
There's a certain way to make mashed potatoes that is a little different. Add garlic, olive oil, and vinegar to it (instead of milk and butter). It gives it a whole different flavor.

Reminds me of a middle eastern potato salad.
