Soup, Beautiful Soup

Love soup, love to make soup. I am not known for anything special in the way of personality, but people have said I make good soups.

So when I saw this quote just now, I felt so uplifted and happy. Especially since the quote is by someone I've always greatly admired. So, my brag is:

I've been trying for years to find a recipe I lost: Leather Bottle Restaurant Steak Soup. IIRC, the restaurant was in New England--I know there are others with that name in other places but this place was in maybe New Hampshire or Massachusetts?--anyway, when I try googling it I only come up with a posting I did asking for it on another site (thriftyfun.com) maybe 15 years ago, sigh. Anyway, any help to find it and any other soup recipes much appreciated, thanks.

This one made sense....

 
This is a way to extend meals. I made a chuck roast, served it with roasted potatoes.
Another meal of beef stroganoff. Leftovers made sandwiches and a great soup
which I've been eating for three days. (one of the things you can do if you live alone)
Add beef and veggies, (corn, celery, onions, carrots) noodles, broth, tomatoes and juice.
 
Watched a Youtube video on making chicken chili. She used a can of Great Northerns and pulsed them in the chopper to make the sauce. Since I don't have a chopper, just smashed them in a bowl and then added water to make it saucy! Sauté onion, bell pepper in the chicken drippings, then added more whole Northerns and Cannellinis, roasted green chiles!!!! Poured it over Fritos, then added fresh raw garlic. Very good!

I make a spectacular split pea soup and a terrific beef barley soup as well.

I stay away from creamed soups, as I'm not too swift with those. I'll leave those to my cousin, who is an authentic French chef.

My chicken soups are also nothing to sneeze at and when someone was ill, they'd phone me for a bowl or two.
 
"NO Leftovers" aka "Fridge Clean Out" Soup with real bone broth (bones boiled the day before). I read that bone broth is a good source of calcium.

I always buy "bone in" meat and freeze the bones and fresh vegetables past its prime.
Bones coated with a little oil and S&P roasted slowly in the oven to brown a little make great broth.
 
I never made steak soup. It looks yummy, but I wouldn't add a whole bottle of wine, I'd add some beef broth or stock in addition to the wine. I love soup and always have. My mother told me that when I was little, she'd ask me what I wanted for breakfast, and I'd say, "Soup!" 😊 Fortunately, my husband also loved soup. He was perfectly happy to have soup and salad for dinner at any time. He'd ask, "What's for dinner?" When I'd say soup, he never failed to respond, "Great!" or "Mmm, I can't wait!" 😋

I always have some kind of homemade soup in my freezer. I have a lot of freezer space. It's great for nights when I don't feel like cooking. Right now, I have a few different kinds in the freezer. Corn Chowder made from fresh corn this summer, Mushroom Bisque, Butternut Squash, Unstuffed Cabbage Soup, and I made Navy Bean Soup and Cornbread to go with it three days ago, next up is Potato-Leek Soup. In the summer, I make minestrone and tomato soup from my fresh garden veggies. I also make my own chicken or beef stock and bone broth. I make and love all kinds of soup! 🙃
