National Carrot Cake Day - February 3rd

Carrot cake with cream cheese frosting is one of my favorite ever desserts. I've got to stop reading these threads, they make me hungry! 👌
 
I enjoy it maybe once a year, but not a favorite of mine. My friends love it, order it when out to lunch.
Me, I'm a three layer vanilla cake, with vanilla frosting kinda gal.
 
I love love love carrot cake. Unfortunately, no one else under this roof can abide it:(

Somebody tell me why it is that it has never occurred to me until just now that I can buy it by the slice at work. I hope I remember tomorrow. I'd really enjoy a piece with a cup of coffee when I get home after a hard morning.
