What are you cooking or baking today?

Living alone I got so used to store bought pizza (Dr. Oetker) that I no longer like any of the fast food franchises' pizzas. Store bought crusts are crunchy, franchises limp! I heartily dislike limp while most folks with more discerning tastes love them that way!
 
Just had Haddock in a Tempura Batter and beans for dinner .

I was going to have Chinese take-out , but changed my mind at the last minute
I hate the fact that most of the fish over here in Canada is breaded these days rather than battered. I remember the wonderful fish and chips I had in Portsmouth during my Navy days and wish those times would come back!
 
Well, I've made some scrambled eggs and GF toast and that's probably going to be it for the day, sans maybe a protein shake.

My husband has done some chicken breast in the instant pot and made a yellow squash/roma tomato salad for me so I think I'm set for the day. :)
 
I'll have the last bit of pizza (breakfast of champions!). It's been fun, but I'm tired of the digestive problems

So today I'll get back to my steady diet of eggs and ground beef, supplemented by small amounts of pork. Bo-ring, but it's for the best.
 
Another question: Does anyone in this forum ever eat lentils? They are a staple with my spaetzle and I miss them greatly. I don't go for the yellow ones, but brown and green ones are delicious.

I toss lentils into home made soup, thickens a soup base up nice.
Red lentils dissolve very quickly when I need to thicken a soup. As do mashed potato flakes, which is why I keep a box of them in my pantry. A can of refried beans is also handy for making a thin broth heartier.
When I cook them I use the brown ones.
I mostly eat lentils in soup, and use whatever is in my pantry. Sometimes brown, sometimes green, sometimes brownish green so I'm not sure which they are. They taste about the same to me.

I prepare lentils as a vegetable, just like my mother did. I let them soak overnight, allow for about an inch of water on top, add bay leaves, two sachets of Oxo, salt, pepper, onion powder, garlic powder, a shot of ketchup and vinegar for a sweet-sour taste, bring the whole thing to a boil and cook for fifteen minutes. If the veggie is a bit too watery I add some flour/water mix to thicken it! I always go by feel so sometimes I am more successful than others!
