I have all ways thought of brisket as a cheap cut of neck meat. Not a fan at all. JimB.

Is this image typical of brisket in the US? In the UK I'm used to seeing bricket at thickly cut rolled meat and tied up with string. The meat usually has a marbled appearance prior to cooking, and is usually roasted slowly so that it becomes tender.

Brisket is delicious and if it's cooked properly, it becomes very tender. It needs to be seasoned and cooked long and slow, tightly covered.
