What's for dinner?

I was going to make this recipe... but someone kept telling me he was starving (yeah, right) and I ended up making a simple pasta dish. I used pepperoni slices and I browned leftover ground meat that I had from yesterday and poured a large can of spaghetti sauce. Added my own spices. But, I didn't get to add the spinach.... which was going to be what I wanted. I did add mushrooms though. And I used up a box of leftover pasta that I had in the fridge ... instead of the bowtie pasta. Next time!

3 hotdogs with a large onion and mustard. I forgot to eat all day and this was easy enough for me to fix for myself. I fried the hotdogs and onions in a bit of butter and ate them on white bread (we had no buns). I should have added broccoli, but it wouldn't have fit into my stomach.

My daughter had her super hot Mexican beef concoction. She put mixed peppers in and didn't realize one of them was super hot. She can eat it, but it was way too hot for me. I told her that she is still in the learning stages, and by the time she is my age, everything would have happened while cooking and there is a learning curve. No need to apologize.

I'm going to try my hand at shrimp scampi for dinner today. Looks easy enough, although I'll be using pre-cooked shrimp intended to be eaten in a salad, so there's that, and we don't have cooking sherry, so I'll be using some wine that's been sitting in the refrigerator door since the Eisenhower administration.

My turn to cook this evening's meal. My other half and I try to keep our diet balanced, we are not vegetarian but we do eat at least two meat free meals a week, so tonight I shall heat some olive oil in a large non-stick frying pan add in a chopped onion and soften for about 5 mins.
To that I shall add paprika and garlic, then cook for a while longer. Next I will add mushrooms that I previously peeled and sliced and cook on a higher heat, stirring often, probably for about five minutes, but I keep a constant check in case it needs to cook for a little longer.

Next I pour in a stock (thank heaven for those, just add hot water granules,) with a generous slosh of Worcestershire sauce. Bring all that to the boil, bubble for five minutes until the sauce thickens, then turn off the heat. Finally, I will stir in soured cream and parsley.

Just a tip if you want to make this yourself. Make sure the pan is not on the heat or the sauce may split.
Serve with wild rice, if those granules were a time saver, then rice in a microwave bag, that takes just two minutes, has to be up there too.
And there you have:
