What Kind of Ethnic Dishes Do You Eat, Like and or Make?

Being of Slovak and Hungarian and Bohemian descent we have had a lot of ethnic foods. One that I like a lot is Pirogis! Another is Kolbasi and my mom used to make Chicken Paprikash. My grandma had a special dish other than those like Noodles and cabbage.

So how about you? What do you eat, like and or make that is an ethnic dish?

Where do I start! I am a foodie and part of our travel is to sample the many tasty dishes from around the world.
Top ones though might be: Indian, Moroccan, Turkish.Egyptian,
Chinese, Japanese, Indonesian and nothing beats an excellent Kobe steak and French fries 😋
 
Now that my boys have left home, I find it difficult to think up dishes for one. Gone are the days I could whip up a mean Vindaloo, Kofta Curry, Butter Chicken and Pilau Rice. Last Christmas everybody bought along a plate. Mostly cold meats, salads and a couple of Prawn and Oyster plates. This year we have decided to go to a fancy restaurant and be waited on. I know it's going to be a bit expensive but what the heck, this is so we won't have to buy Christmas presents.
 
Although my mother was originally from the south and cooked delicious (what is known as) soul food, I didn't follow in her footsteps in that regard. I make what I guess is considered American dishes, Italian and faux Chinese food. :LOL: I say faux Chinese because my nieces ex husband, who is Chinese, told the her, her brother (who's his best friend) and their mom that even Chinese restaurants in this country do not make authentic Chinese food. So he invited them over and made an authentic Chinese meal for them. I mostly make Italian because it's easiest. My Italian dishes probably aren't "authentic" either, but they are good.

Good eatin' Ruthanne 😛 I meant to comment on your pirogies. I worked with a man who loved them. I remember he used to get them for lunch sometimes. It was back in the 70s and I had never heard of them before that.
I lived with a man who taught me about soul food. The one only thing that I couldn't get myself to eat was Chitlins. oMG, I couldn't take the smell!,🤣

I only remember my mother cooking chitterlings once or twice and I wouldn't touch them. If the smell didn't get you, the appearance would. 🤢 One thing I did learn though, is that they take meticulous cleaning...a tedious job.
 
Mexican mostly because it is so easy to find, but I will eat and enjoy most anything. If I can find one Ethiopian is one of my favorites, when traveling through northern Nevada I always try to find a good Basque restaurant (https://travelnevada.com/basque/basque-nevada/).
One that I like a lot is Pirogis!
I love pirogis, but have not had one in years. Not available in the places I've been living.

My mother made them once, just so we could have the culinary experience... once was enough.
