My all time favorite brie is Saint Andre triple-cream. Love it topped with a fig spread. In winter I'll take a brie, top it with sauteed mushroom/onion mix in a balsamic & red wine reduction until thick then wrap & bake in puff pastry.

You can do so many things with brie.
 
Although I've always consumed lots of dairy, I don't know much about expensive cheeses except for Old Amsterdam Aged Gouda that I often buy. Issue is upscale supermarkets have many strange looking European cheese choices I've never tried that when I have tried whatever, most of the time am not impressed so am gun shy of experimenting given cost. And web searching tends to show other people often enjoy soft gooey cheeses for cracker use I don't, at least for the level of cost. I'm fine buying cheap Walmart NM cheddar sharp cheese at $2.00 for an 8 ounce chunk. What this guy really needs is usable advice.

In any case, I've found if I microwave small chunks of most any cheese briefly on a ceramic plate atop sprinkled salt so that it is barely fully melted, that cheese always tastes much better, sort of like a fresh piece of fried bacon.
 
@David777, if you talk to someone at the better stores about their cheese, they usually will give you samples of what you would like to try when you show an interest. At one time, my Kroger's would have samples out for people to try. They also made cheese trays that would compliment the particular wine being served at the tastings on the weekend.
 
I had the idea that the runny cheeses tended to give off ammonia fumes, but maybe those are badly made or overaged ones. I've never tried them though so perhaps I need to take the plunge.

Never smelled ammonia fumes from Runny cheeses.. and believe me I'm very sensitive to smells...

When I was younger I always loved Dutch cheeses..Gouda, Edam , etc... and plastic cheese like Dairylea slices and triangles.. but despite being mild to taste they give me the most horrendous acid reflux..
 
Ok, after seeing how French Brie rated highest in that gourmet article, thought maybe I missed something? So today found a few type of French brie cheeses at Trader Joe's and bought one, TJ Double Cream Brie. First thing I noticed it was indeed soft just like some I had sampled years ago that I was not impressed with. Ate some alone and also with Nabisco Saltine Crackers.

Well no wonder I wasn't impressed years ago. Wondered if again if I was missing something so went online and read some food pro info including a couple Reddit threads where I figured the real brie opinions would rise. Some related like it was like snot and puke. Well ok... :unsure: Indeed, sort of like boogers given color and consistency, was just what I thought but wouldn't have admitted herein earlier until reading others inputs haha. Some commented on its weak mild flavors. On the other hand, some strongly condemned those views praising brie while relating yes brie is soft and with subtle flavor one must develop a taste for.

And I'm picturing a gourmet enthusiast with boxes of various fancy expensive crackers, some well to do folks apparently love, and when interested in a small short evening snack, placing gooey brie on such and enjoying it so much while sloshing it down with their French wine bottle until the whole cracker box is gone, that they then smilingly go to sleep. :sleep:

Brie by itself will not be in my future shopping carts regardless of gourmet reports, though expect yes it might be perfectly enjoyable if presented in certain combinations...But not while having a runny head cold.

Experts the world over can deem whichever cheese is “the best”. Like so many things, taste is subjective. In my book, “the best” cheese is what you like. So there. 🙂
