We're having leftover cold roast chicken, asparagus, and some mac n cheese.

Gammon steak is what I know as fresh ham. I haven't seen it available since the Scotch Market in Braintree, MA back in the 60-70's. Who knew the Scotch Market accutally catered to the Scotch!

Supernatural- "Cooked Smoked Gamon Steaks in butter. Made steamed frozen sliced carrots, fresh mashed potatoes accompanied with pineapple chunks in pineapple juice sauce with cornflour (cornstarch) with sugar.

Steaks were so big, we've now got dinner for tomorrow night 😆😆😆"

Made a cake for me. From a mix. But, I like to get creative. Sometimes I add mint or peppermint extract to the mix to liven it up. I love chocolate. But, I've noticed that chocolate cake mix just does not taste as chocolate as it used to. So, today I added cocoa mix like you use to make hot chocolate with to the mix. Mmmm! It tastes much more chocolatey now. I made it in a 9x13 dish as a flat cake. I am not so sure I can finish it all eating it by myself. If you'd like, drop by and we can have cake & ice cream together. There's lots to go around.

Cake will freeze well. I often do that if there is too much. Then if I want cake I can pull some out of the freezer.

I have a recipe that uses a cup of coffee in the chocolate cake. I also will add a teaspoon of powdered coffee in brownies or other chocolate things. The coffee flavor doesn't come through, but it amps up the chocolate.
 
Leftovers for dinner tonight... Last night, cooked in the oven, a treat we'd picked up during our groceries, a small leg of lamb roast. As it's the square part and not the triangular lower part, there's a lot more meat. Yummy!

An hour, 45 minutes, roasted to perfection. So, tonight it'll be reheated slices and my infamous tea gravy, the broccoli florets plus the potatoes poppers.

I think we'll wash that down with our last can of cider.

It's been a long time cooking meat joints as they were husband's favourites, but we couldn't resist the special.

Next month, daughter wants to try another of my roasts. Joint of pork with an apple glaze, stuffed with butter, garlic and onions. Plus baked mashed potatoes with cheese grilled on top and a medley of vegetables in butter sauce.
 
Divvying up a "potato lasagna" casserole into portions for freezing. Sounds weird but layers of potato, shredded chicken, spinach, cottage cheese, and cheddar with a tomatillo salsa verde.

Cooking for one gets challenging because I fall into a rut. A whole pan of anything can get boring so there's a tendency to play it safe with stuff I know I love.

Yes. You are correct. Cooking for yourself does often turn into one pot meals. I've noticed that when there's more than one person the main item is called 'casseroles' in polite company. But, one pot is one pot no matter what you call it. I am not at all embarrassed that it is what it is. I like my cooking. YUM!
 
Since we forgot lettuce on Saturday's outing and it rained today as well as being Monday... Urgh!

We've decided to have the Spag Bowl tonight. Round 7pm, I'll get the noodles boiling. Then cut peppers, mushrooms and onions. Brown the beef, add the spices and tomatoes and sauce. A splash of oil and then throw the noodles into the sauce.

Meanwhile, we'll get the garlic crushed, mix with butter and get our toasts going. Dinner in half an hour. Yup!
 
Today I made chicken/vegetable stir fry and of course I can't cook for one person, so the rest will go in the fridge for another day. I always cook more and depending on the meal divide in portions and freeze it. This way I don't need to cook every day and its handy when I have to go out, then when I come home just have to warm a meal.
 
We're having one of my favorite comfort foods... sloppy joes. Side will be a veggie bake with potatoes, zucchini, roasted red peppers, etc.

Tomorrow night will be cornbread twists with Pumpkin Chili... I just mentioned that recipe to someone here recently... was that you, @bobcat ?
