What are you cooking or baking today?

Had some lovely bananas where the skins had turned brown but the flesh inside was still firm and nice.

Took last three and mashed them up, added 2 cups of flour, 1 TSP vanilla, 1/4 TSP of baking soda, 2 eggs, 1/2 cup softened butter, 1/2 TSP of salt and 1/4 cup of milk.

Mixed everything and put it in silicone bread mould lined with greaseproof paper. In the microwave, 3 minutes at a time for a total of 20 minutes.

Have now a delicious banana bread. It's my first time baking it in the microwave oven which is 800W. I'm letting it rest now. So, I'll update later in results...

UPDATE: 20 minutes just tad too long, but the banana bread is lovely. We're happy 😀😀😀

Ten days of general slothfulness and relaxed vacation eating = a gain of 4 lbs. I've already ditched 1.5 and am working on the rest. If vacation and holiday pounds aren't addressed immediately, they get too comfortable hanging around on my frame and have been known to (gasp!) invite a few friends to keep them company.

Made some hummus last night and put together a big salad for lunch yesterday, half of which will serve as today's lunch. I've returned to my normal WFPB (whole food plant based) eating. Lots of fruits and veggies, healthy carbs (brown rice, potatoes, oats, whole grains), low sodium, some nuts and tofu, and very little added fats.

A little chocolate, too. A gal's gotta live, right?

OMG. You can do so much with meatloaf, LOL 🤣.

When the kid was in high school, she wanted a Walking Dead themed party. I made a meatloaf skull w/pimento green olives for eyes, teeth was out of onion cut in rectangles. Had a platter with two baby rib racks laid over the top of grilled brats & metts to look like a chest cavity.
Husband stopped me turning the deviled eggs into eyeballs.
 
Now that the weather has cooled, I feel like cooking again. Might as well take advantage of the mood while it lasts. Yesterday I finished up the turkey chili. Today I made chicken soup with wide noodles.

A while back @Liberty posted a recipe for King’s Ranch Casserole. I had most ingredients, bought a couple others and was just looking for Rotel tomatoes. Absolutely none to be found until recently. So today I went to the store for corn tortillas and a green pepper. Can you believe there were no green peppers. I improvised with red, yellow and orange. It was delicious. It’s an easy recipe if all ingredients are available. Thanks, liberty.
 
Had two wee bags. One with pieces of whitefish and one of mixed seafood. Made a light cheesy dill sauce, mixed all together and cooked in the oven for 20 mins at 180°C with added cheese on top. Made some mashed potatoes and corn niblets.

Dessert, leftover from Belgian Chocolate Ice Cream. Enjoying cups of tea, while watching Harry Potter and the Half Blood Prince.
 
Many things that I’ve made lately haven’t turned out the way I expected; part of that is because I’ve been experimenting. Wednesday, we went out for dinner and the place was packed so we went next door. I should have stayed home and made so-so food and I wouldn’t have needed a flashlight to see the menu.

Last night I made Tuscan Chicken. Because the price of chicken thighs was so cheap I substituted them for the chicken breasts. They were bone-in and lots of skin and fat. A penny saved was not a penny earned. It just didn’t have the zing that I expected. Still have enough for another meal and I’ll add fresh red and orange peppers.

Tonight it will the thighs done in a salsa sauce. This one I know so it should be ok.

Maybe my taste buds are off. DH says everything tastes good. Maybe not the fat and bones on the chicken thighs. He will never order anything with either of these. He also says I’m my own worst critic.
 
My wife is arriving back from the Vancouver area (the BC, Canada coast) today. Before she left she'd put some cauliflower pizza crusts in the freezer. I think I'll use one and make pizza for our supper. Topping will be a tomato-sauce/pesto mix, then thin-sliced onions, mushrooms, black olives, sliced artichoke hearts, parmesan & sharp-cheddar cheeses, plus a mild sprinkling of oregano.

@Jules, I really like chicken thighs. Just take off the skin and xtra fat if not wanted. I think the bones make for a nicer taste. I think I would love your Tuscan chicken!
