I'm going to really try and eat more salads but I'm looking for a variety of salads so I don't get bored with them. So, what kinds of salads do you put together and what's in them๐Ÿฅ—๐ŸŒฐ๐Ÿ“?

I make a lot of low carb/keto salads but you can add anything you want to them. I make a regular salad with lettuce, tomatoes, peppers, onions and put ground cooked beef that is seasoned with taco or Italian seasoning on top. I call it a burger bowl. When I cook the beef, I add 2 tbsp. tomato paste and 2 tbsp. of Rotel diced tomatoes, Parmesan cheese and whatever seasonings I want. Then turn it off and cover it with shredded cheese. You can top it with salsa or ketchup or Burger King sauce or salad dressings.
 
To keep things interesting I choose the freshest of the boxed lettuces so they last a week in the fridge to mix with iceberg. It might be spinach, arugula, or power greens to get the dark leafies and mix up the taste and texture. Radicchio and Belgian endive are occasional adds.

We don't make a salad itself as a meal but I do enjoy Cobb salad or Salade nicoise when out for lunch. Pasta salads are good but I avoid them, but do make an occasional batch of pesto on pasta.

I don't eat salads as often as I should, but I like to use baby spinach, tomatoes, red peppers, cucumbers, broccoli and sweet onions. I like to make my own creamy dressing out of mayo, red wine vinegar and Italian seasonings.
 
This is one of my favorite winter salads. I've been making it since I found the recipe in 2014. It's different from the usual "slaw" because it doesn't contain cabbage. I switch it up a bit to use what I usually have on hand. I leave out the bacon and celery seeds, and substitute roasted pecans for walnuts and dried cranberries for golden raisins. It's different and delicious, and holds up well for a few days. :)

Nice to see the recipes with baby spinach.
For me, fresh spinach lasts longer than iceberg lettuce and is also great when briefly sauteed with olive oil and garlic. I always throw in some baby spinach when I made homemade soup too.
 
Bacon, lettuce and tomato salad. Prob use a little mayo for the dressing.
It's different than your usual salad w/greens.

Other than that, I'll make steak salads, or a taco salad w/a chicken breast on top that I've cooked w/taco seasoning on it.
 
I get 2 bags of Dole salad mix at the store, usually "spring mix" and "butter bliss" and sometimes baby spinach. Mix equal quantities in a portion size you think you can eat. Of course you can add extra items like grape tomatoes, nuts, baby carrots, shredded cheeses and the like. Splash on a little of your favorite dressing. Unfortunately, once the bags are open, the contents don't stay fresh very long, I put them in a zip seal bag and squeeze as much air out as I can before sealing and place in the crisper. Still I have to finish them withing about 4 days.

That looks great! Well, not as great as @Oy's bacon salad. ๐Ÿ˜
It also fits in with one of my New Year's ideas.
I want to use what's in season in my area. In January apples and carrots are in season.
Otherwise, January I'll be using frozen veg from last year's garden. February greens start coming in season so I'll use those.
I'm not buying much that's not grown here.
I do appreciate produce from other states though when I need to buy it!
 
Nothing special, just part of a bag of supermarket prepared salad mix and some olive oil based dressing. Frequently throw in diced avocado and a couple of slices of canned beets.
