What are you cooking or baking today?

Breakfast today was brown rice, green onions, cabbage, broccoli, mushrooms, snow peas, bell peppers, green beans, carrots, blueberries, and blackberries and leafy greens. All stir fried in fresh orange juice. I refrigerated enough for two more meals.

Then to today's portion I added ground flax seed, seared tofu, leafy greens and cabbage. Heated that until the cabbage & greens had wilted, and topped it with ground flax seed.

I try to follow the advice of eating breakfast like a king, lunch like a prince and dinner like a pauper. Full disclosure: I need to snack like a princess between 3-4 pm. Usually cookies or some chocolate. (A gal's gotta live, right?)
 

I hated cole slaw (anything with cabbage, really) when I was a kid but love it now.
I’d only eat KFC dyed and sugared coleslaw.
Now I make my own and add tahini, ACV and lemon juice. I shred cabbage , carrots, and that purple stuff. The coleslaw is nice and tangy AND good for me. My husband hates it. He’d rather have the KFC dessert like coleslaw.
 
I'm having Pizza tonight and a brownie with mint frosting. Last night, however, I cooked chicken, brown rice , cauliflower and a few carrots in a large pot with water (boiled it), then put t some Alfredo sauce over it. It took about an hour because it was a chicken leg and thigh and it was also the rice you cook for 45 minutes. I used black pepper, parsley, garlic, onion, and salt free spice as the spices. I thought it was pretty good 😊
