I thought about making that very same thing, for the very same reason. I have a lot of pepper halves in the freezer that I need to use. It's funny you mentioned it.Stuffed bell pepper casserole. Instead of the work involved in stuffing a pepper then baking it Making it in a casserole is wayyyyyyyyy easier & maybe even better tasting.
@RadishRose and @dobielvr, if someone told me they were making "green olive soup" I'd have assumed they were mixing a martini. Never would have guessed it might really be soup!
Oh, let me know how this turns out, @Lilac ... I've seen it and have wanted to try it,Going to try something else I seen on the net today. Someone took burger & spread it on one side of a tortilla. Fried burger side down & when it was done, flipped it over for tortilla to brown like a quesadilla while they tossed cheese on to melt. Once cheese was melted, they added onions, pickles & other toppings & then plated it by folding it over.

Was also thinking of mixing in taco seasoning mix in the burger before spreading it on the tortilla. Not sure yet on that part.
If this works, it would be a good way of doing a burger if you don't have buns handy.
