What are you cooking or baking today?

Stuffed bell pepper casserole. Instead of the work involved in stuffing a pepper then baking it Making it in a casserole is wayyyyyyyyy easier & maybe even better tasting.
I thought about making that very same thing, for the very same reason. I have a lot of pepper halves in the freezer that I need to use. It's funny you mentioned it. 😊
 

Today I make 5 gluten free, yeast free pizzas.
The main flours I used are Cassava and tiger nut. One’s a root flour and one’s a nut flour.
Together they made a nice chewy pizza crust which is what I like.

Since this gluten free dough was too difficult to make into round pizzas, I just winged it and made whatever shape it turned into, as good enough. These are individual pizzas. My husband isn’t celiac so he eats regular pizza. I’m going to add pictures.

@StarSong …. This is another case of, not looking good but tasting great. I shall freeze the other four.

Tried something that I seen in a video & came out pretty good.

Hubby pounded out a flank steak to about 1/2" for me. Then I spreaded on pesto, made a layer of provolone & one of prosciutto. Rolled, tied it & roasted it until internal temp reached 110*F. I let it rest until it reached 125 & sliced it thick. Also had roasted root veggies with it.
 
Going to try something else I seen on the net today. Someone took burger & spread it on one side of a tortilla. Fried burger side down & when it was done, flipped it over for tortilla to brown like a quesadilla while they tossed cheese on to melt. Once cheese was melted, they added onions, pickles & other toppings & then plated it by folding it over. Not sure for a side yet, I have seasoned fries & onion rings in the freezer.

Was also thinking of mixing in taco seasoning mix in the burger before spreading it on the tortilla. Not sure yet on that part.

If this works, it would be a good way of doing a burger if you don't have buns handy.

Oh, let me know how this turns out, @Lilac ... I've seen it and have wanted to try it,
but haven't gotten around to actually doing it yet.

@CallMeKate & @Jules, we just finished eating. My husband liked them & I thought they were pretty good. The burger was still juicy & messy. If you are trying to cut back on bread, wraps will help ... or if you just don't have buns on hand.

I used 8" tortilla wraps. It used a 1/3# of 80/20 burger pressing it thin all the way around to about 1" away from the edges. It made a thin patty like a smash burger. I took some chopped onion & pressed it into the patty with salt & pepper. I put the burger side down of burger/wrap combo on a preheated cast iron griddle & cooked it until it was starting to carmelize. As soon as I flipped it over on the tortilla side, I added cheese & covered it with a metal lid to melt the cheese. It didn't take long. It was the right amount of time for the wrap to brown. I put it on a plate & then added the toppings.

If you want a smaller burger, I'd use the smaller wraps. But the 8" took 1/3# to cover.
