What are you cooking or baking today?

Looks very yummy, @PeppermintPatty. Did you make it exactly to the recipe? (I'd probably add a lot more celery & carrots, but that's how I roll.)
Oddly enough I made it exactly as is. Normally I always change something. I used a huge carrot. The only thing I didn’t do was use a mixer at the end . I don’t have one of those but definitely WILL get one. Watch the short video to know what I mean.

I love the idea of grated lemon rind/ peel and adding lemon juice. It really added a nice zip to it which I really liked. You add the lemon just before serving. It was easy to make .

Now I have some out for tomorrow and the rest is in the freezer. I like being vegetarian.
I’ve always wanted to go vegetarian but used my husbands love of meat eating as my excuse. Plus I think I was worried of throwing my body’s pH balance off. I’m no longer worried about that. I feel surprisingly good. 👍

I made pigs in blankets for lunch. This may mean something else to non-American members, but it's pieces of hot dog wrapped in biscuit dough and baked.

I’m not sure about elsewhere either but here in Canada, they are also called ‘Piggies in Blankies.’ We made some about 3 weeks about and they were so good.

This morning I made gluten free dollar pancakes with homemade maple syrup.

It's going to be simple; pasta with basil pesto in a jar from the store. Salad.

Last night I didn't even turn on the stove! A nice canellini bean salad with olive oil and rice vinegar, chopped fresh cilantro, onion and a can of tuna. had it for breakfast too.
I love basil based pesto sauce. Haven’t had it in ages. Enjoy your dinner. It sounds delicious.

Lunch
A grand burrito
Turkey burger, rice, and cheese
aaand.....sriracha

Dinner
Tossed salad
The greens were fresh picked kale from our garden (resilient little green)
Boiled eggs, tomatoes, shredded cheese, onions, other (weird) things
A dollop of home made thousand island (she finally broke down and made some.......beats the store brands)
I emptied the big bowl

Capped off the day with home baked peanut butter cookies
 
For tonight I may have a salad 🥗. Then. I'm frying hot chicken sausage and adding some great northern beans with a little 🍅 tomato sauce.

This is only the second time I'm having chicken sausage. I never realized how good it tastes! I wonder if anyone else has had chicken sausage.
Yes, I've had them. I get them at Sprouts market. Can't remember the fancy name they give them, but they're good.

eta: they were chicken basil sausages

I thought up a new dish (for me - but maybe someone has done it before) - braciole casserole. I made stove top stuffing, then layered deli roast beef in a baking dish, spooned the stuffing over that, the another layer of meat. Poured a can of spaghetti sauce over all and baked for 30 minutes at 350F. Not the best thing I ever made, but edible. No pic - it just looks like a pan full of tomato sauce. If you don't know what braciole is, Google it.

A few days ago, my new kitchen toy arrive 😁. I bought a manual meat tenderizer for making my own pork schnitzel cutlets. I'll use for cube steak too. It works great!

Kroger's used to do this for you when you bought a whole pork loin, but they stopped a few years ago. It was one of the few things I'd buy from them. Now, most of their meats come to the store prepackaged. Very sad because they had excellent meat cutters at the store I went to who knew what they were doing.

I bought a whole loin at the IGA yesterday & today I cut it up, tenderized it & wrapped them for the freezer.

So tonight, we are having schnitzel with mustard roasted potatoes & onions.

Sounds better since I looked up what braciole is.

I’m of Italian heritage, so I definitely know what braciole is! There are many variations depending on region and family tradition.

Here is mine. Not aesthetically pleasing, but you can see the spiral of meat and filling.
