What's for dinner ( or lunch )

Yesterday I was at the hospital for about 6 hours (DH had outpatient surgery), so hit up the cafeteria for lunch. Chose a very tasty cold pasta salad with a delicious pesto/mayo dressing and sun dried tomatoes and some coffee.

Went back for a yummy cranberry-lemon muffin and another cup of coffee. Between what I drank before we left the house and what I had while he was being attended to, I was righteously buzzing from caffeine by the time he was released.

Just got lunch of Cheese on Toast.. and sliced tomatoes..with freshly milled black pepper

I donn't like cooked tomatoes, nor do I like them cold... so I slice them and warm them for 20 seconds in the microwave.. it just takes the cold off.

I cooked Cheese on toast for the first time in the AF. Just winged it.. 200 deg.. 3 minutes and it's perfectly done.. (y)

Baked half of a salmon fillet slathered in pesto (Priano from Aldi) with left over pasta and broccoli and cauliflower mix from frozen.

Last night I had some refrigerator yogurt and then snacked on way too many pistachio nuts. I'd intended to get my (fasting) labs done early this morning, but realized that salty snack is still working its way through my system so my veins will be difficult to access. Don't want the phlebotomist sticking me four times. Been there, done that, was plastered with the Band-Aids to prove it.

Maybe tomorrow...

At Safeway, bought for on sale at $7, a large 24 ounce container of refrigerated broccoli cheddar soup that will make three 8 ounce or so meals from including lunch yesterday and again lunch today.

Hot dog with mustard and onions for my husband and a cheese burger with mustard, cheese and onions for me for dinner. We like simple food.

Rotisserie chicken and steamed vegetables. Have got quite a bit of fresh fruit atm so, might chop some of that up and make a fresh fruit salad. I don't usually eat breakfast but, might be nice for a mid-morning brunch before going out, always supposing we don't eat it all tonight :)

I've just had chicken as well.. baked to perfection in the Airfryer... I;m the same as yo @Trish ..I don't eat breakfast either. About an hour or 2 after I get up..I eat fruit.. grapes mainly , or grapes and banana

Chicken is good in the airfryer.

I really like fresh fruit. I chopped up some apple, satsuma, mango and kiwi. Planning a late dinner tomorrow so, will probably add some Greek yogurt and seeds to the fruit salad. Waitrose seed, berry & goji mix is really nice with yogurt (y)

I've got to admit I;m not a fan of fresh fruit, cuz of the acid content... but I do like sweet grapes , and bananas... and I add raisins or sultanas to mixed nuts

One of my favouite meals today! Warmed up some muffins, topped them with smoked salmon, avocado and a poached egg. Chopped up some rocket, small cherry tomatoes and salad onion and added some balsamic vinegar. I might make it again tomorrow! ;)

It's approaching 9pm I have't had dinner yet... earlier I had a couple of shredded duck steamed buns with tangerine sauce.... as a snack...

I may have what David had and bake a potato but add Egg mayo to it... or I will have some smoked trout....

Made some hard boiled eggs earlier. For egg salad. Even got busy and made a batch of brownies. Turned out well, though next time I may add chocolate chips or walnuts
