What are you cooking or baking today?

Been busy baking Christmas cookies. Three more kinds to make between today and tomorrow, and then it will be a matter of replenishing after parties and rounds of shipping to friends and family. I've made 350-400 of each type so far (except the biscotti - only about 150 of those as of yet). For reference, the table is 9' x 4'.

I know you bake lots of cookies at Christmas time but had no idea it was to this extent. You are a baking queen. Good job.

I'm planning to make 24 doughs tomorrow morning for a cold rise for Saturday's party. Planning to make 20 pizzas (16") and the the other 4 will get split into calzones.

As with cookies I've got a good rhythm for pizza. From the time I take a dough out of its rising container, I can stretch and dress it in under 8 minutes. Coincidentally, it takes exactly 8 minutes to cook a pizza in my 550° oven.

I put one in, DH spins it 1/4 turn every two minutes, then pulls it out and puts it on the big wood board we have for pizza serving. Lather, rinse, repeat. (I use a wooden peel, he uses a metal one.)

We're expecting about 40 guests for this first party, so the joint will be jumping in the happiest possible way! I'll be making more sugar cookies and biscotti tomorrow. DH has already started bagging some up for the 50-ish cookie assortment we send home with each family as a party favor. 🎄 🕎

My DH will be fixing his mashed potatoes and either a grilled steak, chop, or fish for his dinner at 5pm.
He already fixed his his 0730 bacon, eggs, croissant, and OJ for his breakfast earlier.
He does not eat lunch - well, unless one calls two ice cream sandwiches OR a bowl of popcorn at 2pm lunch. LOL

I am planning a big fresh tossed up salad for dinner at 3pm, which I do at least 4 days a week.
I don't cook much any more. Am a really good cook and baker, love to do both but it tends to put weight on both of us as we get older.
So try to eat fresh mostly if I can.

So I do this up most days:

My salad is made with spring greens, a bit of arugula, topped with half an avocado, half an apple, 1/3 cup of roasted pumpkin seeds, cubes of crunchy jicama; 1/3 cup unsweetened dried cherries or cranberries; sliced up celery and carrots; a bit of yellow or red bell pepper; one or two cut up boiled egg(s); some thin sliced/shredded up red cabbage; french radishes; then all topped and tossed with 1/3 cup of this FABULOUS balsamic vinegar glaze (Bertolli; or when I feel ambitious I make my own, which is less expensive). Then it is topped off with 1/2 cup strawberries and 1/2 cup blueberries.

Other days I will fix a small baked sweet potato, pickled red onion slices, half an avocado on top, topped with a poached egg or over easy egg fried in olive oil. I have a slightly spicy low calorie maple "syrup" that is drizzed over it all. Whole thing only 350 calories...and so filling.

Other days I go and let Poco and Momma's be my cook.
This is where I go and "splurge" once a week, and have two corn and green chili tamales on top of shredded lettuce and tomatoes and a pom margarita! A few corn tortilla chips and guac if I have stayed on my target weight the previous five days.
 
I understand multiple freezers, @hollydolly. When we married, we only had the refrigerator freezer which wasn't working for us. I went out & bought a 15 cubic foot chest freezer & it was great for the two of us. When we started to buy a side of beef or whole hog from our friends, I bought another 15 cf freezer. I also keep my bulk flour in them as well as a few other bulk items.

We found out having two smaller freezers rather than a single huge one was a blessing when the oldest one broke down. It meant we had a back up to put the food in so we didn't loose anything.
 
The big stand up freezer has heavy duty metal baskets which fit perfectly. Two per shelf and no wasted space. Easy to see what is there.
The best freezer is kind of a spelunking project. SO dragged it home and I try to use it for long term items.

Costco has this really really neat Hamilton Beech "Garage" insulated upright freezer for $250.00. It has SEVEN bins that pull out. A very slick design for being organized. Just the right size to supplement my bottom freezer in my kitchen. Didn't need a lot of space, just enough!! I love it.

that's the beuty of having the 2 freezers Lilac, I agree.. of course having 2 full up as I do at the moment, then there's a problem if one packs up, which they shouldn't really..given that both of them are only 3 or 4 years old... the kitchen fridge freezer is only half full I don't like to overfill that one..I tend tot just eep veggies in there so they're handy to reach for when cooking rather than going out to the barn or sheds...
