Scotch eggs are good but, not the ones you buy ready made in packs in the shops.
Soft or hard boil the eggs. You mix the sausage meat with herbs (chives, parsley, nutmeg or whatever you like), salt and pepper and English mustard. You roll out the sausage meat and wrap each egg in sausage meat. You then dip the egg in flour, egg and then breadcrumbs and fry until the sausage meat is brown and crisp. Alternatively, if you don't eat fried food, you can bake them. I recently discovered you can cook them in an air fryer which, I will be trying next time I make them. I usually make them in the warmer weather, they are great with salads.
