How is your day Today? Chat about your plans and achievements 2025....

I had a funny dental appointment at the VA today. I had a bad tooth for decades no dentist could ever remove, and several have tried. After about 35 minutes the dentist went and got help. A big bald dentist with muscles. He grabbed my head, shoved that long needle in my gums, got a heavy tool and moved it around and pulled. Man handled my head it like something from a Looney tunes cartoon. .....and it worked. Even I had to laugh.

I had a long, fun chat with one of my best online friends. We have never met in person, but have been friends since the Eons days 17 years ago. We have called each other Sis for years. She’s a writer, loves a good story and we talked about not only T.V. and movies, but our sometimes mystical personal stories.

After that call, I spent more than an hour on a call with Bank of America. I was on hold for about two thirds of that time. I had to dispute a charge by McAfee, who took it upon themselves to auto renew a service that came with my new computer (not quite a year ago) I never even used the service because I already have a similar product. On January 28th I spoke with a McAfee agent who said he would credit my account and remove the automatic renewal. The charge should have been removed by now, but it wasn’t.

I tried to dispute the charge online, but BOA only gave two options for reasons why and neither fit my situation. The woman on the phone was very nice but I had to ask her to repeat a few things because of her accent. Don’t know if it was Spanish or what. She asked several more questions after I explained the situation. She said I will not have to pay that charge ($85,29) for at least 90 days and assuming the dispute is in my favor, I’ll won’t have to pay it at all. She told me that I should get a letter both in my BOA message center and snail mail. After speaking with her, I went online and canceled my automatic payment which is due on Feb. 17th.

I’m glad I saved the emails about free McAfee service for a year and the email with a survey asking about my phone experience and problem resolution. The BOA agent needed the date I first got the McAfee service and the case # for my complaint with the McAfee agent. Although the McAfee agent was very nice, I decided not to fill out the survey until I saw if the charge was indeed removed. He may have done what he was supposed to, but maybe someone up the line didn’t. No matter….the survey is closed now.

I've loaded and run the dishwasher...don't really have to cook anything, so not much more to do in the kitchen. The rest of the night will be reviewing (and possibly editing) the story I want to send to my Sis, games on phone and T.V.

It was a 'pie production line' this morning - a dozen steak and kidney, and a dozen steak and vegetable pies all now in the freezer. I'm just cooking liver and onions for dinner. After a morning spent cooking, I just want something nice and easy to prepare for dinner.

I've just renewed my National Trust membership for the year. That's another thing that's getting dearer, but I only have to visit 4 or 5 properties to be 'quids in'. There's also a free 'bring a guest' voucher, so I'll ask DD where she would like to visit in the summer.
II love liver and onions. Never had a "kidney pie". Have no idea where I'd buy a kidney to pie it.

Steak & Kidney pie is very popular on our side of the pond. I found the recipe in US measurements.

INGREDIENTS

UNITS: US
  • 1tablespoon beef drippings or 1 tablespoon cooking oil
  • 1 1⁄2lbs chuck steaks, cut into 1 inch dice
  • 1⁄2lb ox kidney (or lamb's, trimmed and diced)
  • 12ounces puff pastry
  • 2onions, chopped
  • 3carrots, peeled and cut into rough dice (5/8 inch)
  • butter
  • 4large flat mushrooms, cut into thick slices
  • 2tablespoons flour
  • 1teaspoon tomato puree
  • 1bay leaf
  • 1pint veal stock (or water and stock cube or granules) or 1 pint beef stock (or water and stock cube or granules)
  • Worcestershire sauce
    • salt and pepper
    • 1egg, beaten, for glazing

DIRECTIONS

  • Heat a large frying pan with a little of the dripping or oil. Season the diced beef with salt and pepper. Fry in the pan until well coloured and completely sealed. Life out the meat and transfer to a large saucepan. Add a touch more oil, if necessary, to the frying pan. Season the kidneys and also fry quickly to seal and colour in the hot pan. Also transfer to the saucepan.
  • Melt a knob of butter in the pan and cook the onions and carrots in the melted butter for 2 - 3 minutes. They will lift any flavours left from the meats. Put into the saucepan with the meat. Fry the mushroom slices in a little more butter, just turning in the pan for a minute or two; keep to one side.
  • Place the saucepan on medium heat, stirring in the flour, and allow it to cook for 2 to 3 minutes. Add the tomato puree, bay leaf and mushrooms. Pour in the stock and bring to a simmer, skimming off any impurities. The meat should just be covered with the stock; if not, top with a little more stock or water. Simmer gently, partially covered, for 1 1/2 to 2 hours. During the cooking time it may need to be skimmed several times.
  • After 1 1/2 hours, check the meat for tenderness. If not quite soft enough, cook for the additional 30 minutes. If the meat is cooking gently, it will not need to be topped up with any additional stock or water. The sauce will have reduced, thickening it's consistency and increasing it's flavour.
  • Taste for seasoning, adding a dash or two of Worcestershire Sauce to the mixture. Transfer to a 2 pint pie dish and allow to cool to lukewarm.
  • Preheat the oven to 220°C/425°F.
  • Roll the pastry 1/4-inch thick. Cut a strip of pastry to sit around the rim of the dish. This will help the top to stay on. Brush the rim of the pie dish with some beaten egg and apply the strip. Brush again with egg. Making sure the pastry top is bigger than the dish, sit it on top. Push down around the sides, trim and crimp for a neat finish. Brush completely with egg wash and place in the preheated oven. Bake for 30 to 40 minutes until golden brown.

When I used to be 5'4" my husband was 6'1". Surprisingly, we did not look like Mutt & Jeff:

Yes, you may be right, Holly, but I feel shocked & cheated. When I see tall women on the street, and they are getting taller & taller, I must stop myself from complimenting them profusely and asking what is it like to be so lucky?
I ask them if they could reach something for me on the top shelf at the grocery store.

Well it's a glorious sunny morning this morning.☀️☀️☀️..it would be, because I have to stay in, because we're playing Russian roulette again with the internet provider engineer... . he's supposed to be here sometime today.... They say I'll get a message when he's on his way, they said that last time, he never came... so we'll see. I've told them if he doesn't turn up this time, I'm cancelling my account.

Glorious sunny morning here, too, but cold. Really cold at 25F! I talked with my brother in the UP yesterday where last night's temp was supposed to be -20F.

This morning we're going to McD's to visit our favorite person, Charlene, who's celebrating her birthday today and is one of those very rare McD's creatures who works there full time. She's also the sole support of an assortment of kids/g'kids and poor as a church mouse. We were going to bring her flowers but decided on a card and cash instead.

In the small-world department, Charlene is a friend of my supervisor when I worked as the Biscuit Bitch at the fast food breakfast place.

Gonna enjoy the sunshine today because the rain and storms are going to come back tomorrow.

@hollydolly If the lord's willing and the creeks don't rise (as we used to say in Texas), the tech person will show up and make your internet all better.

Wooohoooo... and stuff.... as Gigi would say.... the tech engineer *Michael*... 7 feet tall ..and very sweet guy... has been, and he's installed my new TV box, and got me all my channels back.... *doing a little dance*.... however the swap over of my internet won't happen until the 24th so I have to wait for that....My new router tho' is white now instead of many years of black....

Gigi...good thinking about the cash..I've been dirt poor in the distant past, and much as flowers are lovely when you're that poor, every penny anyone can give you, is a blessing...to go towards bills

Bless your heart....

..now send some to me... :p:p

They've been in the barn since I had my kitchen remodelled several years ago, and useful for his Maj to sit at the workbench.. but they're not needed now, so they're in my way every time I go into the barn, plus I've got a handyman coming to look at fixing the barn roof, so the less stuff is in his way the better..

back later
