Cooking for One Ain't Easy

I just finished my third and final seving of a soup I made.

Another reason why I go out to eat...
Could you freeze some in pint mason jars? I just froze three quarts of turkey, rice, and mushroom soup.
It came from a 12 lb turkey I cooked and split up and froze in servings for two people. We won't get sick to of it and will enjoy it later. @hollydolly , you always seem to be freezing things to thaw and enjoy later, right?
I'm not arguing with you going out and eating among people though. šŸ˜‰

Sometimes I go out to eat just to be amongst people.

It'sad to sit home alone and eat.
Maybe learn how to can stuff. ( cook in mason jars)That way you can make a big batch and save individual portions for years to come.
Certain foods you can freeze if you don’t want to do the canning. You can freeze soup in containers or freezer bags.

I prefer to eat at home for a variety of reasons.

I cook once or twice a week and rely on frozen or canned single serving foods along with the occasional grab ā€˜n’ go offerings in the grocery store deli.

I read the meal threads on SF to see how others manage and occasionally come up with a new item to add to my weekly rotation.
 
I always prepare my own meals, eat at home and have done so for quite a long time.
This is far preferable to me than going to an expensive low quality restaurant or fast food place.

All of my cooking is done with two 3 quart induction sauce pans and an 8 quart induction pressure cooker
using one of the two countertop induction cookers. With these I prepare plentiful amounts of pinto beans,
organic oats, rice, sweet potatoes, cabbage, and anything else that I consider to be healthy with no additives.

Getting out to meet other people is important to me too. I go to the Senior Center on Mondays to play
table tennis for an hour or two, plus get there early to talk and share with others in the lobby before it begins.

I haven't been going for walks outside since the end of November, due partially to the colder weather
but mostly due to the terrible modern walking shoes with their flimsy foam soles and shoddy construction.
This morning I found the glue gun I used a few decades ago to repair my shoes and hopefully get back out there.

Yes, I get several servings of different kinds of meat at the grocery store deli, divide it into individual servings, and freeze to reheat later. If I start potatoes and vegetables early in the day in the crock pot, they're done by lunchtime, then I just heat the deli meat a few minutes in the oven, and lunch is ready by noon while I'm doing other things.

yes I do..I batch cook and freeze a lot . It means I don't have to eat the same food night after night until it's gone...

last night I batch cooked a big pot of lentil/bacon and veggie soup... that went into the freezer in individual portions this morning. Also the big joint of bacon, got cut up into portions to freeze also to use to put into other things like Bacon and egg flan..or finely chopped into Mac & Cheese

I batch cook most things I make from scratch...if I'm making minced beef I make a larger portion, and then freeze it into individual portions .. as cottage pie or other dishes...

Even Bach cooking French toast.. is easy... just make it as normal, let it cool, then portion into freezer bags.. and freeze. Taking out and reheating in the toaster or microwave as you need it ...
 
When I was quite young, after I moved out of my parents' home, I lived in a couple of situations where I normally had to cook for myself. And since then I've learned to cook many things, not frozen-quicky grocery items.

What I'll offer, wisenior, is I can post a link to a good, easy homemade pizza recipe how-to video. Just requires flour, baking yeast, a little olive oil, and basic kitchen gear for mixing and putting pizza in the oven. Would you be interested?
 
Half of nearly everything I make gets frozen. Soups, spaghetti sauce and casseroles are my favorites to freeze. Pyrex and Anchor Hocking both have inexpensive glass sets just the right size for one meal. It's simple to just pop the lid and microwave.

But hey, if going out works best for you enjoy it!
 
I used to eat spaghetti a lot when I was single. Just take a jar of spaghetti sauce, add some ground beef, make some spaghetti, and that was my dinner for three nights a week. I'd just leave the sauce in the pot and reheat it for each meal until it was used up.

Chicken is easy to make, too, when it's the boneless chicken breasts, and it's cheap. There are all sorts of easy meals you can make with chicken.

No matter how lonely I've been, I've always cooked for myself and ate pretty well. Not that I haven't had my share of fast food, but most days, I cooked.
 
My vegan son often makes meals for himself even though I cook meals that we all three can eat several times a week.

His mainstays are: Baked potatoes, just wash stab and microwave for 8 minutes, canned baked beans microwaved, and poured over toast or that potato. apples, peanut butter on whole wheat, cereal and soy milk.

I make lunch for myself, alone every day and it's always either a tuna or peanut butter sandwich on whole wheat, plus a piece of fruit and a stalk of celery. It's really pretty healthy.

I prefer to eat at home too. I dont mind leftovers. Eating the same thing for multiple days doesnt bother me.
It nice to know I dont have to decide what to cook.

I batch cook some meals but mostly I cook and freeze meats when they go on sale. Meal prep goes a lot quicker when the meat is precooked. Beef and noodles. Chuck roast from freezer plus Stouffers fettuccini alfredo.

I also do what I call upgrades. Green Giant cheesy rice and broccoli plus Chicken from freezer.

Im not a vegetarian but I do a lot of frozen and canned vegetables. Lately Ive been using up meats from the freezer and making various vegetable soups.

The husbands not here and Im alone so Ive turned into a very lazy cook. :D
Last night I had a peanut butter and banana sandwich with bacon and raisins.
I can hear him now. IM NOT EATING THAT. :D
