Ms. Rose, the ingredients he's using are the same as the Mexican drinking chocolate disks you can buy. I've bought them on rare occasions for convenience. There are several brands to choose from. I think Taza is the best, but Abuelita by Nestle, and Ibarra are probably the easiest to find in the grocery store.
I have the cacao nibs but not the gumption to make them, lol.
