Had salad and assemble-your-own paninis last night.
DD & I both have presses, as does DD, so she brought hers. Each press accommodates 2 paninis at a time. If we're a larger crowd, I add my big electric griddle to the mix and put weights on top of those sandwiches.
She & I coordinate on the ingredients that usually include: tofu that's been sliced & seared, deli meats, sliced cheeses, (homemade) vegan meatballs, fresh spinach, pesto spread, olive tapenade, sun-dried tomatoes, and the pièce de résistance: a can of Trader Joe's Grecian Style Eggplant with Tomatoes & Onions.
