Holiday Fruitcakes. Do you like or dislike?

What is the secret ingredient to a moist fruitcake
cake?
What would you say it is?
 

Haven't thought about fruit cake in years! Yes to Collin Street Bakery. I liked them so much, I used to send them to family members across the country. Found out a few years later that most didn't like fruit cake and either tossed them in the trash or gave them away, so I quit doing that.

Now I want one. Hmmm....

In the UK we have Christmas cake, which is essentially a very rich fruit cake with lots of marzipan and white icing.

I love it, and I also love Christmas pudding as well. Christmas pud is basically a bowl shaped fruit cake that's been made even thicker than normal by the addition of suet. It's then steamed for several hours and turned out upside down onto a large plate. This then has brandy poured over it, and the brandy is lit so that it heats up the outside and burns off some of the alcohol.

When served with a brandy sauce or very thick double cream it's absolutely delicious, but would sink a battleship if too much is eaten. However, the puds keep forever, and long ago I discovered that you can cut a slice out of one and microwave it instead of steaming it.

The best fruitcake I've ever had was made by Rainbow Bakery Company (no longer being made unfortunately); it was almost all candied fruit with very little flour and NO nuts, lol.
Harry and David's make a thing they call "Fruitcake Confection" that has little or no cake... just candied fruit and nuts... just in case that might appeal to you.

@LadyEmeraude, the fruit needs to be soaked in whatever flavor alcohol you prefer until it's plump & the marzipan helps keep it moist too.

My favorite is Stollen that have a marzipan filling. The ones without tend to be dryer, but a little butter on top makes it tasty. Aldi's have several flavors & my favorite is the cherry that has nice size pieces in it along with the marzipan. These also freeze well for later in the year when I want one.

@Coco, look for them at Aldis. They have the good prices & I think they taste the best too.

Here in Borehamwood we have an Aldi and a Lidl almost next to each other. I tend to prefer Lidl stuff to Aldi's and at this time of year I buy trays of Stollen bites with marzipan. Each bite is around 20gms in weight and around 90 calories, and you get 350gms per tray. I think the most recent tray I bought cost around £2.50. Very tasty and a not too expensive sweet treat.

@BJintheUK, we don't have a Lidl around here. They were going to put one in a few years ago, but for whatever reason it fell through. I've heard they are a nice store & was looking forward to it.

I bought some of the small bites the other day that had apple in one & marzipan in the other.
