I have a pork loin the the freezer and will augment that with yamkin (combo of sweet potatoes and pumpkin)* and probably Brussels sprouts.
I do not know as yet if church will have their after service brunch on Easter. I've already suggested to the organizer that it be suspended on Easter because most people will be anxious to get home and will have a big meal there.
* 1 can of sweet potatoes (yams), 1 equal sized can of pumpkin puree (not pumpkin pie mix). Mash together, season to taste and heat in microwave.
