Reflections of My Life

This morning I started using my new Kindle Fire 10 tablet. I need to learn how it works and how to use the many things it has on it. Started with the books I already have in my content library. Nice to read since it is so much bigger than the other Kindle I have. Easy to see! But it is much heavier. And too big to carry with me. Like today I took my original Kindle to my appointment in my purse so I could read in the waiting room. The new one is too big for me to carry with me. But that is okay.
 
I have some Tyson ones in my freezer. They cost too much so I order them occasionally with my food delivery from Target. They are so good! I eat 4-5 at a time with fries. The bag lasts me for 3 eatings. But it seems like lately there are less in there.


Do you like squash? I really like it but don't see people sharing about it much in food threads. It's soo good sautéed or baked.

Yes! I have grown squash for years before I moved here (8 years ago this month). All types. I canned it like crazy even though all the books and regulations for canning it say not to. I did and it was not slimy one bit (that's why they say not to can it). I have posted on my blog pictures of the many ways I grew and canned it. I used to make a squash dish called "I Can't Believe It's Squash" that was a popular post on my blog.
Sounds like northern FL year 'round. 😄

It is.
That's why I don't want to get involved with doctors. I know I'm not going to want to do half of what they want. I too think they make big money the more that they can get patients to do. I question if most of it is really needed.


That's great that you have a city or senior shuttle bus. Before I moved back to FL, I lived in a small town in a senior one-level apt. The only bus service was a shuttle bus run by the senior center in town. They had a shopping bus and medical buses. I'd go to Wmart and we were picked up in 1 1/2 hrs. It was enough time because I don't like being in stores for hours like I used to. It was $2 round trip and ran M/W/F at 9 and 11am.

Do either of you ever get frozen cut chunks? Or canned?
And then prepare it in some way that brings out the flavor and texture?

Last week I used the last butternut squash to make soup; butternut, ginger, garlic, carrots, onions and coconut milk. I miss the winter produce but look forward to summer tomatoes and many others.
I'm sad to see others here also feel their doctors are more interested money than really helping you feel better. Our regional hospital just gave notice to their employees that they are expecting to lay off 300 next year. What a tempest in a teapot!

I did not have a freezer the whole time I lived on my homestead. So I canned everything. You name it, I probably canned it. Even food bought from the stores.
Once, and only once, I bought the frozen squash. Tasteless and mushy.
Even though they say not to can it because it will be slimy & mushy, I canned it. The secret is to can it in chunks not slices. It was never slimy, mushy or tasteless. In fact, it tasted like it was just picked. I had many people who read my blog tell me they started canning it and it was really good. I could use it in recipes as well as just heat it and eat. Since it always gave me a huge harvest, I would can every single one regardless of if it got too big. It was food and it was good!

I have been looking forward to today all week! I have a hair appointment at Teasers, my hair salon. I have not been there since Nov. and was toying with the idea of not coloring it. Just have it cut a bit. It has grown long and is hurting my neck. My hairdresser usually thins it a bit and you can imagine how heavy it is without having that done. But I changed my mind about the coloring. It is a hard habit to stop when I don't like the color gray on my own head. Too light. I have always had dark auburn and in recent years changed to a medium brown.

I will be walking so hope it doesn't rain. I will carry my umbrella just in case.

I admire people who do a lot of canning. Sometimes, I watch a little Homestead Heart on YT. They have a medium-large homestead and they do much more than I'd ever want to do. I would like to try some canning in a very small way. I would love to make some jellies but the recipes always require too much sugar.

I have been hoping to find a way that I can make true jelly with much less sugar or artificial and/or natural sugar substitutes. Seems like cane sugar is needed for it to gel properly and be transparent. I'm not sure. I don't mind making fruit spread and fruit butters, but my dream is to see the sun sparkling through jars of colorful, transparent jelly that I've made.

I had an awesome day! It was so good to see Carissa, my hairdresser. And all the others. Fun day and a lot of laughing. I told her about the color making my head itch and she used a different process. Instead of a long wait it was only about 15 minutes. It also makes my hair look more natural with a few silver stands coming through. Oh yeah, she also gave me a dozen of eggs from her son's flock.

My hair feels so good! Light and free!

Thank you! I will look it up, but first I need to get a few economical canning supplies. I can order a small kit from Temu or get one at Wmart.
