Baked potato skins...

How much do you like potato skins - best part of the potato, just another part of the potato, or should be thrown in the trash?

My mom thought of potato skins as garbage. She was appalled to see them sold in some restaurants as an appetizer. I love them, especially when they're nice & crispy.

I've never seen them served separate from the potato. I like them equally with the baked potato. Even the thick skinned ones.
 
Haven't had Potato Skins in forever, but love them, yum, as well as Baked Potatoes. All good!
 

Love them. Baked Potatoes in the oven that have been rubbed in Olive Oil, Sea Salt and a tiny bit of garlic...just like candy. The skins being the best part.

They are great..and a very healthy part of the tater...they are where the vitamins live. Of course, all the added stuff is not great, but still a nice thing to eat
 
They are great but believe it or not they can be deadly. Several years ago a fellow from a town here in Ontario nearly died from Botulism that was traced back to baked potatoes.

Wow, this man was on life support! It says-

"Irina Frenkel, a food safety expert at the Canadian Food Inspection Agency, says potatoes should be unwrapped after baking in foil and exposed to air. They should be kept in the fridge until they are ready to eat so the spores won't grow.
 
I am confused a bit, maybe need a second cup of coffee. About the botulism in baked potatoes. Are we supposed to bake them first in the foil then refrigerate to kill the spores? Or fridge first, then bake? At any rate this is scary stuff.

These are the directions from Health Canada.


  • Don't use aluminium foil to wrap potatoes or other vegetables for baking, unless the vegetables will be cooked and eaten right away. If you want to store them after they've been cooked, unwrap and refrigerate them right away.
This happened not too far from my hometown and I doubt you'll find anyone there that doesn't do it this way. I guess it's extremely rare until you're the one that gets it.

Thanks James, for the clarification, so now safe to foil potatoes for tossing on the barbq, they don't last when baked along with a steak dinner.
 
I love potato skins loaded with cheese and bacon! I really don't care about the sour cream so i'll take mor cheese n bacon please. :D
