Soup from Leftovers

I used the couscous mixture left over from making the stuffed peppers, a little water, a seasoning packet saved from ramen noodles and a handful of bagged kaleslaw (that a mix of chopped kale, shredded red cabbage, shredded carrots and shredded broccoli stems.

Not the best soup I ever made taste-wise, but it used up leftovers and is probably fairly nutritious. I do make good beef vegetable barley soup, though, according to my taste buds.
 

I love soup from leftovers. Especially from my Thanksgiving turkey. I always buy one bigger than I need (for 4 people) just to have enough to send home with our guests, and to have for leftover stuff.
Deb, yours looks good. I have taken to adding barley to my soup at my husband's suggestion. It is a great, filling add to the soup.

My mom used to make that. I have yet to be able to reproduce it.
